Hey welcome to my cooking channel where I will try to post weekly videos of me walking you through cooking up some delicious dishes. Hopefully you guys can try some of this stuff at home.
Simple garlic scape stir fry
Definitely keep your eye out for these delicious veggies around May/June timeframe. They are super quick and easy to fry up and go with any dish. If you don't have oyster sauce, feel free to just use a bit of soy sauce or salt and it will be just as tasty.

This is an amazingly delicious and well rounded dish. You get meat, veggies, rice, egg. All the flavors of sweet, salty, acid, spicy really come together with a lot of different textures from the crunchiness of the veggies to the creaminess of the egg.

Today, we make two really simple dishes with ingredients easily found in any grocery store. For the potatoes, you can easily forego the szechuan peppercorns and chilis. This is an absolute go-to dish for me. It's so easy to make, and I can do something a little different each time. It's way healthier than fried wings you'd find at restaurants, but just as crispy and tasty. The sauce itself is the key. You can really experiment and play around. I've tried all kinds of weird combinations, and honestly, it's always turned out awesome.

@@goodfella998 the Cuisinart looks really nice, I'll give it that. more stable looking stand too. BTU is quite a bit lower though. It may be barely enough, but honestly I don't know.
Do you have the electric or manual ignition version ? I’m thinking about buying it today thanks
I have the manual version. I would say it depends on your situation and needs. I always have a blowtorch handy. It's part of my kitchen tools, so bringing it with me to start it isn't a huge deal. That said, electric is still just a bit more convenient, so if you want convenience above all else and your budget can withstand it, just splurge a bit.
Great video man ! I watched a few of your videos . Is there a specific reason why you took off the legs ? Still looks good either way lol
Cause I got my outdoor kitchen area built now, so having it sit on top of the counter and workspace just works better. It's also a lot more stable...the legs are a bit wobbly. They're a decent temporary solution, but for a more permanent setup, you really want a better stand with more heft.

Nice Video but as a retired gas engineer can I recommend that you don’t twist flexible gas hoses and not stand the gas bottle as close to the wok burner as LPG is heavier than air and a leak will ignite at low level at knock you off your feet …it’s dangerous
Can you rate how much wok hei you can get from the torch? 10-restaurant style to 1 being the lowest. Did the food taste like propane at all? Thanks love your videos!

That wok burner has a flame guard, if you have it facing towards you, it will help prevent burns
Practice your wok flipping with some dry rice. Never let the wok come off the edge of the burner. It should be more of a sliding motion, not flipping as you would a pan. More wok hay this way. That wok burner looks great though. Where did you get it?
Make sure you say what wok burner you use. I can’t find a good one and the Chinese grocery doesn’t carry them or reconendvany.

My favorite Dish. Have to stop cooking indoors because of the smoke so I ordered the 160. What size wok are you using? I currently have a 13 with no handle but thinking I need to go to at least a 14” with either a wood or steel handle.

Put on an apron so you don't end up with splattered oil messes all over your shirt. It probably would be better if you had raised the height up a few inches. Looks a bit low to me. Your cooking ingredients doesn't look like it's at a good placement location. You need to have it more accessible and easy reach with inches rather than having to turn your back to reach for things.
I love the sound of the butane. It sounds so intimidating as if it's really a dragon blowing torch flame out. There's nothing better than to have chow fun with wok hei!

my question is on this burner can you toss the food sliding it on the bottom how is traditionally tossed? Im looking to buy it and wondering if its sturdy stable enough and gives you enough space to toss it this way? would appreciate the input.
Hard to say, but you can easily remove the legs and put it on something more sturdy or build your own fairly easily.
Good question. I'm wondering the same thing. I can toss stuff by lifting the pan in the air. But I'm hoping to achieve this by sliding, because the carbon steel wok that I have is pretty heavy (4.5 lbs without any food in it).
