it's a latte art of a bird opening its garlics
From the looks of it, slow circular pouring = more extraction. But I think there's still a couple other factors going on as well. With the circular pouring method, the spout is closer to the bed, which would mean more heat retention since the water has less "air time." That alone will result in more extraction as opposed to the left sides brew. From what I can tell, there seems to be more coffee stuck to the side of the filter that isn't getting any agitation on the left side, but I do think the height of the spout has something to do with that as well, not just the pouring technique. My go to has always been the aggressive method, but from what I'm seeing, a slow steady pour, closer to the bed, results in more extraction. I think I'll be switching my pour over technique to circular after seeing this. Thanks for the video!
The choice of coffee also matters because East African coffee is good for the circular method, but for Latin American coffee, it's all about using the aggressive method. Please do an experiment and tell me the result.

pour water aggressively, quickly and at the right time according to rule V60. Goal is to have good smoothness, if you are too slow you wouldn't have the smoothness of the coffee in the cup.
