Would love to see a healthy version of a stew. One of my favorite comfort foods in these rainy days☺ But my partner is vegetarian so beef stew is not an option for the both of us.

For this season I have planted zucchinis which are yellowish with an orange pattern. Would they work for this recipe?
Any color zucchini work, also yellow ones, just make sure they are not too bitter as the yellow ones tend to be more bitter than green! let me know how it works out for you!
