It's been years since I cooked professionally, but if my memory is correct about 30 minutes in shell, since the temp is highly controlled as is the humidity they won't overcook even if you cook them for longer.

It is a shame they sold off Kitchen Aid! Back then it was the best home dishwasher out there and now that Whirlpool owns Kitchen Aid, the product is a piece of junk.
