As a cook I joke about white people and seasoning food cause it’s funny, but in reality it’s a joke. And isn’t an actual issue. So many problems here. I season my food well but…. Dumping powders on food doesn’t make them “good”. Buy better qualities vegetables or meats or whatever. Taste the food. European cuisine highlights the food, not the seasoning. Seasoning is secondary, and complimentary. It improves it but is not required for good taste. Many herbs and such were not available in the colder climates, so those recipes were brought over. People made due with what they had. And a lot of it was delicious. Have you had biscuits and gravy? What does that need besides salt and pepper. Have you had chicken and dumplings? What does that need besides salt and pepper. Very white foods especially from the south where people were poorer. But they did what they could and brought ideas from Europe, especially Celtic places. Most “unseasoned” food lacks salt, pepper, or acidity such as citrus or vinegar, hence the bland flavors. An onion goes a long way. A clove of garlic goes a long way. So on so forth. I think you’re thinking about herbs and spices, which again should be complimentary, not a requirement. Not everyone can afford to buy tons of “seasonings”. They’re expensive. European food specifically was meant to be nutritious and hearty. Your staples in the tougher conditions were bread, cheese and ale. Scraping together whatever ingredients you had and making something decent so you can get your work done or recover after a long day. Think about stews which are a later version of pottage and such from medieval times. If things like that are bland, generally salt fixes it, or even pepper or acid. Putting a bottle of mixed seasoning doesn’t make a food good. It may make it taste better, but it becomes the highlight of the dish. I say if you make a great dish with less seasoning it shows how great of a cook you are. It goes beyond seasoning, a grilled piece of meat doesn’t taste the same as a boiled one, or a fried one or a broiled/baked one etc etc Our people literally took cooking and turned it into theory, science, art. There’s a reason why the highest renowned chefs and cuisines in the world are in places like Italy and France… and it ain’t cause they’re unseasoned whites….
