      Definitely a feature. As the embers fall, the wood will combust rather than smolder like on a kamado or drum. So you'll want to load it up w some more wood chunks for the first X hours of your cook.

    I've been considering purchasing Super 55. When you hang ribs using this hanger do they touch the baffle plate? If I can't hang ribs it's a no buy for me.

      No sir, The designer lowered the heat shield from the former design so the baffle is lower. Thus there is between an 18 to 19 inch clearance. I used to promote the PBC. Did some of the first content on that product and that was directly touching the fire at times BUT the ribs would tighten up and shrink and not touch the fire for long. On the Super 55 a rack never touches the baffle. Not that i have seen.     This is a very instructive video. I pretty much intuitively figured the same technique ( I don’t have a torch so I remove a shelf and put my charcoal chimney in the cooking chamber to heat it up. I didn’t close my grease trap though so I’m going to try that next My issue is that I like to cook hot and fast 275-300. And when I reach temp 275 , I open the door to put the meat on the racks ( a shoulder, couple of ribs and chicken legs, and what happens is the temp goes way down and takes a while to recover but barely gets to 270 even with the door cracked open and the ball valve open. Any suggestions?

      That sounds like it goes down because of the colder temp in the meat density. What therm are you using and where is it placed. The door gauge will drive you crazy. lol

      1 Part Koshur, one part 16 mesh pepper (fiesta brand at HEB) and 1/4 part to 1/2 part cayenne). Post oak or something mild if you can get it. No mesquite! 150 to 200 for hour and a half then bump to 275 to 300. Pull just before ready, wrap, return to hot pit for 5 minutes then shut down it down or hold in cambro if you have a dense pit.

      Glad to see back to back in full force. I’ve been a long time follower on RUclips and the BBQ Brethren forums since 2007. I’m still using the OG Butt Glitter to this day on my Butts. It took me a minute to decrypt the ingredients you posted on the brethren forums, but it was worth it! I’m heading to Academy this weekend to pick up an Old Country Gravity Fed smoker. I need something a little better than this pellet and Komodo to add to the arsenal.

      In my case it does. For the tri level rub, Lawreys, level one, a rub that is lower salt (cuz u have lots of salt in level one and two) which I USED TO USE my butt glitter cuz I kept it in 5 gallon buckets and now I just grab some stand by rub …. Then Montreal, again, I don’t cook in such bulk that I make my rub like that anymore. As I recall though, my atomic dawg was put together because it had sone stuff in it that MSS didn’t have have. It was expensive and hard to get in bulk at the time. Funny, now all I want to get back to it SP and C

    What type of charcoal do you use? I just bought this gravity pit and I’ll still experimenting with charcoal. Did the initial burn in with cheap charcoal and it made a ton of ash. Did my first smoke with Fogo lump and it was fine although I couldn’t get a consistent temp of Belle 225. I’d like to get in the 160s for sausage making.

    Bbq guru is the worst company to do business with. SAVE YOUR MONEY. These guys will lie to your face when you contact support. They are not worth the trouble. Just use a ThermoPro product, save yourself the trouble. Plus the ultra q doesn't even have a low temp audible alarm, so forget ever knowing when it's low so you can add wood. They have stupid color changes on the device but let's be honest if you can see the device then you can see the temp... it's like their child engineered it. Shameful.
