Food deserts are a legacy of poor-quality local transportation in big city residential areas, which lead to the intense pressures to concentrate food stores into large box stores. In the old days, people bought food at tiny, corner grocery stores. I remember these stores as having severely limited variety of food, and it typically was beyond expiration dates. Plus, it was costly, and unsanitary. These bodegas, as these corner grocery stores were called, had zero facilities to unload delivery trucks, and those trucks were the size of pickup trucks. Drivers had to park a half block to a full block away, and then hand wheeled food, in narrow, corrugated cardboard boxes, on very narrow two-wheeled hand carts, to each bodega's front door. The tiny delivery trucks brought small stocks of food each day, to a handful of stores. Stores were visited sporadically, as the unsold inventory was costly to keep on hand. Fleets of various small trucks purchased their stocks from transfer stations, whose operations are poorly documented. (So, I know where they were located in Cleveland, but know of no details as to how they worked.) Beginning in the 1960s, with the construction of the Interstates, commercial trucks began to use trailers that now run over 50-feet in length, and can weigh over 40 to 50 tons, overall. Suburbs were built with the residential areas linking houses into subdivisions with very lightweight roads, and heavy highways were built to service restaurants and shopping centers. Heavy highways are costly, but can carry heavy delivery trucks. With customers concentrated at big box stores, high turnover rates of stock, and low prices, and good profits are possible. The new supermarkets in big cities need to be located at intersections of two heavy highways,. They consume a lot of land for parking of customers' cars, and a surprisingly large amount for heavy trucks, plus a lot of heavy driveways.
