    Great oil recipes but using the fresh ingredients in the bottles will introduce a source for botulism to grow, even in oil. Shelf life is generally 5-7 days unless you store in the fridge which extends the shelf life to 3-4 months. Completely dried herbs are much safer.

    Thank you for sharing your knowledge with us. However I have a question for you, why do we strain all of the first batch of herbs/peppers and then add more herbs/peppers into our bottle before we pour the double strained oil on top of it? Couldn’t we just use the ingredients that we cooked in the oil, or steeped in the oil? I have been watching videos on how to make infused oil‘s, and half of you saying to just take the script ingredients and transfer those into the jar and pour the oil on top of it. And half of you saying to strain it and then re-introduce A fresh set of ingredients into the oils.

    Is it safe adding the raw garlic cloves /rosemary to the mix at the end? Thought garlic had to be cooked to prevent botulism?

    How long do they last for?

      Between two to three months. Keep refrigerated, it might get a bit cloudy but will clear when you get it out in room temperature.

      @@kotagreeksouvlaki6410 what if i dont keep it in fridge? It looks so nice i'd want to leave it out? Also is there a trick for the garnished fresh herbs - should i leave it out to dry overnight or is using fresh fine.

      Using fresh is fine. Just try if you're using garlic to be a bit old. You can also keep it out of the fridge but in a dark place with low temperature, like a cellar or something like that.

      @@syamim6 The reason for keeping in the fridge, is that fresh ingredients added to the oil and left at room temperature can develop a bacteria called botulism, which causes death. So yeah, try not to risk killing your family, id say...

    Thank you for Sharing this info... but what do u do with the first set of herbs u infused u throw it away or u can use it back in cooking?

      Hello Salima, you could dry them and use them for cooking if you want. The flavor might be a little bit less but still good enough for cooking.

    I'm new to infused oils so I'm not sure what they are for, other than body oils and I'm not interested in that. What do you cook with them? Or are they for green salad? If I knew what to do with them I'd probably make all the ones you just did.

      Hello Trish, there are so many ways you can use infused oils. They are ideal for making flavored salad dressings, for cooking, for baking etc. We use them a lot in our meat marination as well. It is true though that many professional spa services use them for different body treatments.
