Just smoked my Frist spatchcock Chicken,I placed a pan under the chicken to catch the drippings,in the pan I put two cups of chicken stock. After the chicken got to 165 I pulled it,then took the dripping pan inside made "Smoked Chicken Gravy" you need to try this. Best gravy we have ever had.
