Ingredients:
Mango - 2 nos (750 grams before chopping)
Ginger - 1 1/4 tbsp (thinly sliced)
Garlic - 1 1/2 tbsp (thinly sliced)
Green chillies - 4 nos(per your spice level)
Curry leaves
Gingely oil - 3-4 tbsp
Mustard seeds - 1 tsp
Turmeric powder - 1/4 tsp
Chilli powder(spicy) - 2 tbsp
Kashmiri chilli powder - 2 tbsp
Asafoetida powder - 1/4 - 1/2 tsp
Fenugreek powder (roasted & powdered) - 1/4 tsp
Sugar - 1 tsp
Salt - as needed
Vinegar - 1/2 cup

    Rava Appam using tender coconut (No Yeast)- This is an easy and tasty breakfast recipe. I am not using yeast or baking soda in this recipe for fermentation. The appam comes out very soft. Tender coconut water and sugar helps with the fermentation process. Please make sure to ferment the batter for 8-10 hour or overnight. Ingredients: Rava/Semolina: 1 cup (I used roasted rava) Cooked rice: 2 tsp (heaped) Tender coconut water: 1 to 1 1/4 cup Tender coconut pulp - 3/4 cup(the one that I used was not that tender) Sugar - 2 tbsp Salt - 3/4 tsp Method: 1. Grind all the ingredients listed above and allow the batter to ferment for 8-10 hour or overnight. 2. Make appams using the fermented batter.

    Golden beetroot thoran - ബീറ്റ്രൂട്ട്‌ തോരൻ. ഒരു മഞ്ഞ ബീറ്റ്രൂട്ട്‌ പരീക്ഷണം‌. Golden beet tastes very different compared to the regular beetroot. You will like the taste if you like raw papaya or pumpkin thoran. Ingredients: 1. Yellow Beetroot 2. Grated Coconut 3. Shallots 4. Curry leaves 5. Green chillies 6. Salt Method: 1. Finely chop the beetroot and a small onion or one shallot. 2. Splutter mustard seeds and add the chopped beetroot mixture. 3. Add curry leaves and salt. Sauté it well. 4. Grind together coconut, green chillies, shallots and salt. 5. Add the coconut mixture to the sauteed beetroot. 6. Cook it for 2-3 mins and switch off the flame.

    Chicken noodles - This is my version of healthy noodles using brown rice and millet ramen noodles, loaded with chicken and vegetables. Ingredients: ✨ Noodles of your choice - cook as per the package instructions. ✨ Garlic (chopped) ✨ Green onion (chopped) - add the white portion first while sauteing and the green part at the end after all the cooking. ✨ Red Onion ✨ Green chilli - please try adding green chillies if you like it a little spicy. We like the taste of it. ✨ Vegetables - I have used cabbage, carrot and beans here. You can add capsicum as well. Do not overcook the vegetables. ✨ Chicken - Marinate it with a little oil, soy sauce, salt, pepper, turmeric powder and then cook it. No need to deep fry. ✨ Soy sauce ✨ Sriracha sauce ✨ Pepper(I forgot to add this time 😉) ✨ Oil - you can mix a little sesame oil(~1tsp) along with your cooking oil if you like that flavor. ✨ Egg ✨ Salt A few tips: ✨ Do not overcook the noodles and the vegetables ✨ Use high flame throughout the cooking process ✨ Do not saute your vegetables for more than 2-3 minutes ✨ I have used very little oil but add more oil if you like it that way.

    Ridge gourd and dry prawns curry - പീച്ചിങ്ങ ഉണക്ക ചെമ്മീൻ കറി. പീച്ചിങ്ങ ഇഷ്ടം അല്ലേൽ ഇങ്ങനെ ഒന്നു ഉണ്ടാക്കി നോക്കണേ, നല്ല ചൂട്‌ ചോറിന്റെ കൂടെ സൂപ്പർ ആണ്‌. Method: 1. Peel the ridge gourd and cut it into small pieces. 2. Wash and fry the dried prawns. Make sure to wash it 2-3 times to remove any dirt. 3. Add the cut ridge gourd, prawns(crush a little while adding), curry leaves and salt into an earthen pot. 4. Add some water. Ridge gourd has water, so no need to add a lot of water. 5. Meanwhile, grind together coconut, green chillies, coriander powder and turmeric powder to a smooth paste. 6. Once the ridge gourd is almost cooked, add the ground mixture. let the mixture cook for another 2-3 minutes. 7. Temper the curry with mustard seeds, curry leaves, chilli powder and fenugreek powder.

    Poori(പൂരി) - A perfect, tasty poori recipe which stays puffed up for a long time. പൂരി എല്ലാം ഉണ്ടാക്കി കഴിയുമ്പോൾ താണു പോവുന്നുണ്ടേൽ ഇങ്ങനെ ഒന്ന് ട്രൈ ചെയ്തു നോക്കണേ.. എന്തായാലും ഇഷ്ടപ്പെടും. Recipe courtesy: @riascollection (via @vineethasusheeb ) Ingredients: 1. Whole wheat flour(ഗോതമ്പ്)‌ - 1 cup 2. Maida/All purpose flour(മൈദ) - 1/2 cup 3. Semolina(റവ) - 1/4 cup 4. Besan(കടല മാവ്) - 1 tbsp 5. Sugar - 2 tsp 6. Salt - 3/4 tsp 7. Warm oil - 2 tbsp 8. Milk or water - 1/2 cup to 3/4 cup (I used 1/2 cup milk and1-2 tbsp water) Method: 1. Mix all the dry ingredients well. 2. Add the warm oil and again mix it. 3. Add milk or water and make a smooth dough. 4. Keep the dough for 30 mins before rolling out the pooris. 5. You can dip each ball slightly in oil and roll it out. 6. Don’t roll it too thin. This is very important to get puffed up pooris. 7. Add it to hot oil and cook it on both sides.

    നല്ല നാടൻ അരി കൂൺ തോരൻ/Mushroom stir fry with coconut - നാട്ടിൽ വന്നപ്പോൾ കിട്ടിയ കൂൺ കൊണ്ട്‌ അമ്മ ഉണ്ടാക്കി തന്ന ഒരു തോരൻ. Method: 1. Splutter mustard seeds 2. Add the ground coconut mixture to the pan and sauté it for a few minutes 3. Add the cleaned and washed mushroom and required salt. Add less salt initially as the mushroom will reduce in quantity once cooked. No need to add any water 4. Cook it until all the water is gone and the mixture is dry. 5. Add curry leaves at the end before switching off the flame and give it a quick mix.

    Bread pudding - Bread pudding is one of the easiest, melt in your mouth pudding that requires hardly 10 mins for preparation. This is my ammachi’s(maternal grandmother) recipe which I got from my mother, Ammachi used to make this for us whenever we visit them. Hence it is very close to my heart☺️.. Hope you all would give it a try! Ingredients: Milk - 500 ml Bread - 4 slices Eggs - 2 Vanilla extract - 1 tsp Sugar - 4 tbsp(for the custard) + 4 tbsp(for the caramel) Method: 1. Make breadcrumbs with the bread slices and add milk. Let this soak for 10 mins. 2. Add eggs, vanilla extract, sugar and blend well. 3. Make caramel and pour it to the pudding tin. Let it sit for 5 mins. 4. Pour the custard mixture on top of the caramel layer. 5. Cover with an aluminium foil and make holes for the steam to escape. 6. Steam it for 30 mins(depending on the height/thickness of the pudding). 7. Let it cool completely and then refrigerate for atleast 2 hours before serving.

    Ragi(Finger Millet) Manni is a traditional, healthy and easy to make sweet dish which has a pudding-like consistency and it is made using finger millets, grated coconut and jaggery. Recipe courtesy : @auraartofhealthyliving Ingredients: Ragi(Finger Millet) - 1 cup Grated coconut - 1cup Water - 6 cups Jaggery - 1/2 cup (I added after melting) Ghee - 1-2 tbsp Cardamom powder - 1/2 tsp Salt - 1/8 tsp 1. Wash and soak ragi for atleast 8 to 10 hours. 2. Blend together soaked ragi, coconut along with 1.5 to 2 cup water. 3. Extract the milk using a sieve/muslin cloth and repeat this step 4 times until all the milk is extracted. Use the remaining water to blend it each time. 4. Add the extracted milk along with melted jaggery, cardamom, salt and stir it continuously. When it thickens, add ghee and stir it for another 5 mins. 5. Add the mixture to a greased pan. 6. Once it is cooled down completely, cut it into the desired shape and enjoy. Serve it chilled

    Rava idli / റവ ഇഡ്ലി - An easy breakfast which can be made in an hour. Do you like rava idlis? Ingredients: Oil Mustard seeds Urad dal Onion - 1 (small) Green chillies - 4-5(chopped) Ginger - a small piece(chopped) Carrot - 1/2 cup (grated) Rava - 1 cup(used roasted) Salt Thick curd(not sour) - 1/2-3/4 cup Water - 3/4 cup (+1/4cup) Coriander leaves - 1 tbsp(chopped) Baking soda - 1/8 tsp(Mix with 1 tbsp water and add for easy mixing) Cashew nuts - roasted(optional) Method: 1. Saute everything together. Let it cool for sometime before adding curd and water. 2. Keep the mixture aside for 30 minutes. 3. After 30 mins, add baking soda and coriander leaves. Add water if required. The batter should not be too thick or too watery. 4. You can add roasted nuts before adding the batter if you like. 5. Steam the idlis for 10-12 minutes

    Spicy roasted makhana(fox nut) - Let's make an easy and healthy snack today. Ingredients: Phool Makhana(Fox Nut) - 100g Garlic - 1 tbsp (crushed) Kashmiri chilli powder - 1 tsp (heaped) Turmeric powder - 1/4 tsp Salt Ghee or oil - I used coconut oil 1. Add the oil or ghee. Roast makhana for 5 minutes(until crispy) 2. Add garic to hot oil and roast it well 3. Switch off the flame before adding the spice powders. Add the spice powders and salt. Roast them for another 2 minutes 4. Add the roasted makhana and mix it well. Enjoy!

    Garam masala powder - This is a mix of ground spices widely used in Indian cooking. It is made by slightly dry roasting the whole spices to release their flavours and ground to a fine powder. There is no single recipe for garam masala. Every household has their unique way of making the masala powder and it varies based on the region, personal taste preference, type of food etc. The blend that I use is based on my mother’s recipe(Kerala style). Homemade garam masala powder is much more flavourful than the store brought ones. Ingredients: Fennel Seeds / പെരുംജീരകം - 50grams Cardamom seeds/ഏലയ്ക്ക - 20 grams Star Anise / തക്കോലം - 20 grams Cloves / ഗ്രാമ്പൂ -20 grams Cinnamon sticks / കറുവപ്പട്ട - 20 grams Pepper corns / കുരുമുളക് - 20 grams Poppy seeds / കശ കശ - 10 grams Mace / ജാതിപത്രി - 1

    Ragi(Finger Millet) idli / റാഗി ഇഡ്ഡലി - Soft and healthy ragi idlis. I served it with onion chutney(ഉള്ളി ചമ്മന്തി) and coconut chutney(തേങ്ങ ചമ്മന്തി). Do you like idli? What is your favorite combination with idli? Ingredients: Ragi/Finger Millet - 1.5 cup Raw rice - 1/2 cup Fenugreek seeds - 1 tsp Whole Urad/Black gram - 1/2 cup Salt - as needed Method: 1. Wash and soak ragi, rice and fenugreed seeds for atleast 6 hours. 2. Wash and soak whole urad separately for 6 hours. 3. Grid whole urad first, followed by the ragi, rice, fenugreek seeds mixture. 4. Add salt to the batter, mix it well and keep it covered for 8 - 10 hours until it is fermented well. 5. Pour the batter into idli mould and cook it for 10-15 minutes. 6. Demould the idlis once it is cooled down a bit. Note: The same batter can be used for making dosas as well

    Onion chutney / ഉള്ളി ചമ്മന്തി - An easy side dish for idli and dosa. I usually saute all the ingredients for onion chutney and then grind it but recently saw a youtube video by ​⁠‪@MahimasCookingClass‬ where the chutney is made without any sauteeing. This is an easy peasy chutney with some minor adjustments to her recipe. I like it along with coconut chutney for idli. Ingredients: Dry chillies - 4 (based on your spice level, soak in hot water for 10-15 minutes before grinding) Onion - 1 cup(chopped) Garlic - 1 small clove Ginger - 1 small piece Tamarind - 1 small ball sized Curry leaves Salt Jaggery - 1/2 tsp Grated Coconut - 2 tbsp Oil Mustard seeds

    Ithal Orotti / ഇതൾ ഒറോട്ടി - This is very popular malabar special dish often served with non-veg curries. Ithal means petal and orotti means pancake/bread. As the name indicates, it is coconut milk pancakes, layered like petals and steamed. The batter doesn't require any fermentation. I served it with beef varattiyathu. Ithal orotti recipe by @al_malabari Beef varattiyathu(roast) recipe by @frommykitchen Ingredients: Jeerakashala rice - 1.5 cup (Soak for 3-4 hours) Thick coconut milk - 1.5 - 2 cup (I used close to 2 1/4 cup) Cooked rice - 3 tbsp Salt

    Chicken Biriyani/കോഴി ബിരിയാണി ഇന്ന് ഒരു ബിരിയാണി ഉണ്ടാക്കിയാലോ? അധികം വഴറ്റാതെയും പൊരിക്കാതെയും ഒക്കെ ഉള്ള ഒരു ബിരിയാണി. ചോറും കറികളും ഉണ്ടാക്കുന്നതിലും എളുപ്പത്തിൽ ഉണ്ടാക്കാൻ പറ്റുന്ന ബിരിയാണി. കോഴി തലേന്ന് തന്നെ എല്ലാം മസാല പുരട്ടി വെച്ചാൽ പെട്ടെന്ന് ഉണ്ടാക്കി എടുക്കാം. Rice - 3 cup Chicken - 900g (used boneless thighs) Turmeric powder - 1/2 tsp Ginger-Garlic paste - 2 tbsp Green chillies - 10-12(based on your spice level) Mint leaves - 1/4 cup Coriander leaves - 1/2 cup Tomato - 3 (medium sized) Lime - juice from 1/2 of a lime Salt Garam Masala - 1.5 tsp(or as per taste) Onions - 3 (I used air fried onion, you can deep fry for added taste) Curd - 3 tbsp For garnish: Yellow Milk(for color) - 1/2 tsp turmeric powder mixed in 1/4 cup warm milk (Air) fried onions (Recipe: @ministryofcurry) Coriander leaves Ghee - 2 tsp Method: 1. Chicken masala - as shown in the video 2. Rice: Add 1.5 tsp ghee to a cooker and roast the whole spices until you get the aroma. Add 1.5 cup of water to every 1 cup of rice (so total 4.5 cups) and the required salt, lime juice, fried onions(optional). Put the lid on. Once the steam comes, put the weight. Switch off the flame once the pressure is built properly. Open it after 30 minutes. No need of any whistle.

    Chicken pola(ചിക്കൻ പോള) / Chicken cake - This is another popular malabar snack. My version of chicken pola is made using a chicken masala layered with a batter made of wheat flour and egg. For chicken masala: Ginger - a small piece Garlic - 2 large cloves Green chillies - 6-7 Onion - 2 large (chopped) Salt Turmeric powder - 1/2 tsp Chilli powder - 1 tsp Coriander powder - 1 tsp Fennel powder - 1/2 tsp Chicken - 1.5 cup(cooked with salt/pepper & shredded) Coriander leaves Bell peppers - 3-4 tbsp(chopped) For batter: Eggs - 3 Milk - 1 1/4-1 1/2 cup Salt Wheat flour - 1.5 cups Oil - 2 tbsp
