homemade mozzarella Y/N?

Recipe:
3.7 litres (1 gallon) Whole Milk, (pasteurised or Raw, just NOT ultra-pasteurised)
3g liquid rennet
8g citric acid
Salt to season
- Combine rennet with 50ml water
- Combine citric acid with 200ml water. make sure crystals are completely dissolved.
- Add the dissolved citric acid and water to the milk while vigorously stirring to ensure it’s evenly dispersed.
- Heat to 32°C/85°F , then remove from heat and slowly add the rennet water whilst stirring.
- Cover with a lid and let it sit for 10 minutes. Let it sit for longer if the curd hasnt properly formed.
- Slice the curd vertically and horizontally for a grid pattern and then put back...

I only know the family recipe of a basque type cheesecake, it is without cream cheese but with quark (farmers cheese, curd cheese, soft cheese, I dont know the correct word) + cake base the general ingredients are: 1kg quark, 6 egg yolks, 50g sugar, 120g cornstarch (premixed with some milk) - 6 egg whites, 170g sugar, 1 tbsp vanilla/vanillin sugar, 50g butter (stiff whiped and fold in) 220 Celsius, 20 minutes in, cut away the crust, back in for 10 minutes, then out for 15 minutes - this 10/15 ratio 4x times Now if anyone ever would do this good luck, also its european so less sugar I guess
