Regarding the timing issue - from how they look in your hand, it seems your muffin size is smaller than mine (that's why you probably needed an extra muffin tin and less time for baking). And I noticed you baked them on a high rack, try in the middle next time, to avoid the burning on top. Either way, they look amazing, and it's a good call to take them out earlier.
