@@MBREEZ you can use a different sweetener if you want. I used erythritol because it behaves similarly to sugar. I also don’t think there is enough evidence to support the claim that it causes blood clots

It’s the psyllium husk! I tried making it with two different brands. The “It’s Just” brand on Amazon turns purple when mixed with water and baked. They “Himalaya” brand uses white psyllium husk, which allows the green from the avocado to show through. The flavor is not affected by the purple color

I’m sorry, I didn’t see this until now! You could make it vegan by using Beyond beef or sausage “meat” and vegan cheese. I would probably use Daya mozzarella because it melts well. For toppings, you could use McCormick’s vegan Bac’n bits

They turned out a bit hard to bite since they were frozen, maybe i left them in the freezer too long. and im not a huge fan of the parchment paper for the burrito, not super easy to chew, ill try it with flour tortillas next time i think
