A good explanation could be that their human half allows them to be more open to fusion as saiyans are usually fool hardy and singular in their ambitions. So like gotenks might be able to unlock more potential as fusion with the added boost that they have that unlimited potential that makes saiyans so formidable.

You could also add that Vegito: (before retconn) fusion was thought to be permanent, which would give them time to plan stuff out. Gogeta: has a timer on how long there fusion last. So finishing the fight fast as possible (regardless of situation) (broly fight) which makes sense he wouldn't strategize. plus goku mostly in control 😂

In the same vein I'd say Gogeta is far more insightful. He grasps things much quicker and is able to act on them. At least the movie
