So if they take the f pawn with the bishop would the gambit be declined?
Once they take the e5 pawn the gambit is accepted. And although bishop xf7 is a stronger move and a computer will say that it is not that bad for white, black still has the strong fork with the queen and humans really struggle to play as white in that position.

I got a question, what if they take the queens pawn with the knight?
So according to lichess database Nxd4 only happens 3% of the time in that position, but if someone does it there is a fun line where you can sacrifice your bishop on f7 with the future ideas of Nxe5 then Qxd4.

what if the opponent king moves back to safety after king takes Knight?
If black has his knight out and moves back to e8 then I'd develop Bd3. If when his knight is out he goes to g8 then I'd do Bc4. And if his bishop is out and he moves his king back then I'd do Bc4.
