My most common process is purchasing the piano score or lead sheet and arranging for the instrument(s) that perform. However, when the music is not in print, then the process is more involved and I will write out the notation using some aural training and keyboard to decipher key, key signature, melodic line and harmonic chords.

There is a website called tunescribers where you can pay to have them transcribe a portion of any song you can send them a link to (i.e. RUclips video) . It can get pricey though. I use subscriptions services like EverAnd (formerly Scribd) and MuseScore for the bulk of my music to access standard piano/vocal reductions and then use that as the basis for my own arrangements that I improvise. I also can transcribe, but it takes me a very long time lol. For string players, you can take a piano reduction and pull the melodic line for the solo instrument. If you're playing with additional members of the ensemble, most players can pull their harmonic accompaniment from the piano chords and written accompaniment. @major_inc
