I would say look for cat sanctuaries in your area. We have one here in Tucson, and in addition to that there is the county animal control, which combined is access to hundreds of cats and kittens for free (adoption always has costs - but the visits are free!). Cafes are fun though; I love going to those when I'm travelling and miss my calico.

bro just volunteer at a cat shelter. it’s cheaper than paying 35$ and you will get good insight on various cat temperaments bc they all have different behaviors and moods.

Would recommend fostering. Gives the cats at the shelter a good home even if temporary. It will also help you know if you are ready to actually have a cat before permanently adopting one. Plus, the shelters where I am from, they allow you to apend time with the cats and dogs so you can bond with them.
