Your breasts look bigger than mine. I bought a whole duck and I want to serve the breasts like slices of steak, but they look so thin. I found a Gordon Ramsay video where he’s cooking duck breast and his look thinner than yours also.
I bought the duck breasts from D'Artagnan (dartagnan.com). It's always a little pricey to get meat off the web, but these are worth buying even frozen. these are the ones, my friend (magret of duck breast)

Bringing steak to room temperature is not really necessary. I’ve cooked many steaks directly out of fridge and there’s no difference in flavor or tenderness from room temp steaks.

Yes, 127 F - 130 F (52 - 54 C) is the range I would aim for to achieve medium-rare.
