I apologize for this rant being long. As a native to the Philly area (Camden NJ, right across the river), and being a sandwich connoisseur of all things from the northeast, the bread is the absolute best part of any jawn. If you don't got that bomb bread, you ain't got no good sandwich. In Philly, you got damn good bread all over the city and Delaware Valley. So, any spot you go to, either it's a true cheesesteak/hoagie spot, pizza joint, or a corner store spot up in any hood, you will get a good cheesesteak. Now, mostly all the people from the hood spots would put mayo on they cheesesteak. From my time growing up, you had to put mayo on your jawn so you could have some kind of flavor on it because most of the time, you couldn't afford to put cheese on your sandwich. And if you use the right kind of mayo on your cheesesteak, it makes it taste like you got extra cheese flavor. And I can say a little more than half of the Philly area puts ketchup on their cheesesteak. But also remember, NO GREEN PEPPERS ON A CHEESESTEAK!!! If you like to know my list, here are the spots in the city to go to: 1) Angelo's Pizzeria 2) John's Roast Pork 3) Max's Steaks 4) Dalessandro's 5) Iskabibble's 6) Tony & Nick's (formerly Tony Luke's) 7) One Pound Cheesesteak 8) Any corner store in the city, very affordable for a tight budget!!
