I used lime 🍋 instead of vinegar. However, vinegar works perfectly well on it too.

Yeah no this is wrong. When eggplants were discovered by westerners they were white and the size/shape of an egg. Hence egg plant
Eggplant history! There are different types of it ( color & and shape, as you said .
Not only that, but we modified them for ages. They USED TO be round. There are white ones too. Imagine stumbling upon a small round white object the size of an egg growing on a plant. Clearly, there's only 1 thing to call it.
When the white one is growing, it appears to be like an oversized egg.
Do you cook it like greens? With vinegar?
After washing it, I boiled it in a little water. I don’t cook it in too much water because I don’t want its nutrients to leach into the cooking liquid. With less water, there’s no need to pour any liquid down the drain. In my opinion, its leaves are softer than collard greens, and the way to cook them is similar. Vinegar is not needed; it's already sour. For this particular one, I didn’t add anything. However, if you want to sauté it with ingredients such as oil, garlic, onion, chili, etc., you can do so.
What is that plant?
It is known as Roselle or Hibiscus. It is also commonly referred to as Jamaica sorrel, karkadeh, bissap, sabdariffa, sour tea, and red tea. It has a sour taste.

I have to ask. How many ounces does each of these little containers hold? Is this method for portion control? Did you repackage from larger cans? Do you have a video? I use these 2 ounce containers to store raw almonds for bento boxes. The lids aren't leakproof for liquids.
☆These containers are 2.3 oz. ☆Yes, they are for portioning purposes. ☆No, I did not repack them. They are made from tomatoes from my backyard garden. ☆Yes, I do. There are two videos before this one that show how I made them. ☆Sometimes I use these containers for salad dressing.
