Hi! I am a trained and personal former chef from NYC. I have since retired and moved to Jamesville, VA. I now live amongst acres of farmland and endless seashores along the Chesapeake Bay. Along with my own garden I focus more upon farm to table recipes and great comfort food mixed with haute cuisine. I like to teach cooking on a more serious level, however, often with an injection of humor. I never play music or just text instructions because I believe those are distractions to learning and that is why you are here. Please feel free to subscribe and ask any questions you may have. I used my enamled staub-cocottes just for pastasauce and the other for boiling pasta, and the enamel have started to “melt” away for a lack of a better word.. i can almost see the iron behind.. after 2 YEARS OF USE!!!😮😮😮 Expected so much of SO EXPENSIVE pots!!!😔😢😩💔 What is the enamel made off anyway? Staub won’t tell! I have eaten it all? Looks like plastic? And it has also rusted along the sides (under the lid)..

No sorry. Too big. They do make some for chicken eggs but never had one.

@@ChefKevinRiese, You can do off-page SEO and on-page SEO for your video. Whatever video you publish on RUclips, do a lot of keyword research related to that video. And put them in your video. I can help you if you want.

Hi Chef Kevin! I've had a giant (13"?) Scanpan Chef's Pan for over 24 years and it's still my main go-to. Sure it's worn in the middle. Propane, so it was never exposed to ultra-high temps to help it have such a long life. Twice in all those years (of raising kids, house parties, etc.) did it get overheated by someone forgetting it was on heat...I feel if those two times had not happened, it would be as nice on the inside as yours! I love it!!

I forgot to record that but I added it right before serving it so not to overcook it.

Hey C.K. how's it going down there ? I love blue claw crab anything damn near. I bet this was delicious! Hope all is well and i picked some of my last tomatoes from my garden that it for now just some pepper plants left hanging on.

Wow! That looks so good! And I envy your ability to walk out into your back yard and pull up a trap of blue crabs. You should make a fishing video from your dock. A catch and cook of sorts. Would love to see that.

How did you clean it and did you avoid high heat. I just bought a 28cm one and they are so expensive that I want to keep it in the same condition your one is in.
Thx for asking. I just use a sponge with the scrubby side and some dish soap. If its heavy soil then let it soak for a while. About the heat thing dont worry . Thats there thing. Never try to cool a hot pan with cold water. Just let it cool its self.

It is a beast! I cooked 25 lb of wings and 10 lb of sausage at the party. Garden a mess but I will send you a private video bc you are my most loyal follower soon.

The JB show was a fail for me. I arrived on time but after 45 min they moved the venue due to high winds. Had a hard time keeping a hot fire so not much food got cooked. It would have been a logistic nightmare to put out a fire and move to a new location and start a new fire so we just hung out on Kellam and gave the food away.

Yes steaming is faster and doesnt wash away the flavor like when you boil.

@ChefKevinRiese hey things happen I'll heal up. I just picked some Japanese cucumbers they're huge first time growing them this year and some zucchini also my first tomatoes so far like I said I planted way too late next year I'll plant early.
