How would I do this with dry yeast instead? I can’t find fresh anywhere!
3:30 pm USA I used the concerted measurements in oz, but had a difficult time either the water dosage, dough was very sticky and had to add a lot of additional flour to keep it together. Should it be that way? It’s resting now, don’t know about the final outcome.

hello i tried it but have alittle bit of a problem is when i put the dough into the pipe and start to spread it on the sheets it starts to go liquidity and not sticking and hard like urs

I just tried this recipe and the dough is in the refrigerator. The dough was NOT wet, as you indicated. Can you confirm the amount of water? Also curious why you give the amount of water in grams vs milliliters. Grazie!
