I don't understand why but From really likes putting hitbox in the arms (obviously Fume Knight's arm hit you, always happen to me this when i roll like this fighting him) of some moves of enemies that uses weapons. If i remember Sullyvan is the same, but it's hard the get hit because of the huge i-frames time in Ds3 and the famous ans hated titanite demon of Ds1. But yeah, that's hitbox is huge, maybe Fume Knight have the shape, so the hitbox is bigger.

Awesome fight honestly, if you had grenade's, beenades, shurikans, throwing knives would have made this fight slightly easier. But I'm glad to see people still play this game, 10/10 favorite game
