They've been painted green, particularly "Deep Green". Most blocks, including trees (which the large mushrooms are considered as) can be painted, and the glowing look of the mushrooms is retained.
Other biomes are turning too, and it spreaded across our world.
It's probably a glitch or error in color generation, like number idk, I've looked for information and apparently there's no one who talks about it
