CRISPY PATA | PUTOK BATOK RECIPE | Chef Nico Garcia Recipe
Crispy Pata Recipe
1 liter water (or whatever's enough to submerge the meat in a pot)
1.5 kilo pork hocks (whole pata)
4 pcs dry bayleaf
120 grams onion leeks
1 whole red onion, halved
5 pcs star anise
3 pcs red chili
4 tbsp rock salt/ sea salt
1 liter oil
For the sauce:
1/2 cup vinegar
2 tbsp minced garlic
2 tbsp minced onion
red chili, chopped
*you can also add 4 tbsp soy sauce if you want
Procedure:
Step 1: In a large pot, pour water until about 3/4 full. Add the salt, bay leaf, onion leeks, onion, star anise, chili, and pata.
Step 2: Boil until the pork is tender. This would take around 45-60 minutes.
Step 3: Remove the pata from the pot and transfer to a drying rack.
Step 4: Poke holes all over the m...

Tried the recipe. Got no hondashi so I used a mix of chicken bouillion and fish sauce. Tasted really good, almost Same with the ones I used to order from Japanese restaurant here in the Philippines ... The chef /owner was Japanese.

In Japan, tempura batter is more thin and not beaten much to prevent gluten production for proper tempura texture. To get the flaky texture, why not just bread with the dry batter after dipping in the wet batter?
I think your recipe fits what I want to try. Cornstarch should make it more crispy. Also love the fact that you skip the ice cold water or carbonated water technique. I may try it if I have it at home. But I doubt restaurants would bother to use carbonated water on every order. So I think thats just a gimmick. Your looks the most proper for traditional looking Tempura. thank for the recipe
