Gina’s simple and stress free easy Italian /Canadian recipes that are modified,whenever possible, to be free from dairy, egg and vegan. Due to family members who have severe dairy and egg allergies, I have had to modify my Italian cooking to not include dairy and egg products. Many times the meatless dishes become vegan by virtue of the fact that there is no cheese, butter or eggs. Cooking with olive oil is not only healthy and flavourful but it also easily replaces butter. Various kinds of vegan cheeses are now readily available in supermarkets so now is the time to start experimenting and getting creative to make all of your favourite Italian foods. Most of my recipes will give you many options - regular Italian/Canadian recipes along side dairy and egg free options. I hope you take advantage of the variety of choices that best meet your family’s needs.

This is an Easter Sunday recipe from my husband’s Neapolitan / Calabrese side of the family. His mother, God rest her soul, would make it every Easter Sunday and we’ve carried on her tradition. I hope you enjoy it.

Yes, you are right. It is a dry pasta recipe. That’s the recipe from the Nonna and Nonno. But you can certainly modify it however you like it. Enjoy!

Gina could you direct me to the sausage recipe? It would give a start for the amount of spices. I have just started sausage making and I am looking for a good Italian recipe, hot and mild. I usually make 5 pounds at a time and would hate to over/under spice that amount of meat. It takes a while to eat it all and try again. There was an Italian delicatessen owner (Joe) who made the best Italian sausage but he passed away. My sausage is no where near his but I keep trying. Knowing the spices is just as important as the proportions. Where does the hot pimento paste go and how much? Thank you for your help. I am looking forward to my next batch of Italian sausage. BTW Italian sausage is not Italian sausage without fennel. Anthony
Yes, love the fennel!! Well Anthony, your question about wanting precise measurements is a tough one. When we asked Nonno about how much salt, he said “ a handful “. So you can see the dilemma. I seasoned about 15 lbs of meat. All measurements are estimates depending on how much salt you like and how spicy you like them. It’s all very personal depending on your taste. This is why in my video I strongly encourage taste testing before you make them all. Always put less salt than you think you need. You can always add salt but you can’t remove it. Season your meat in small batches. Work with one pound at a time so it’s easier to judge. Add 3/4 of a tsp of salt per pound then fry it up into a patty and taste. If you need more, you can add it. Same with the spices. Add some the taste. The pimento paste gets mixed right into the meat along with all the other spices you want to add. When adding hot spices, start by sprinkling maybe half a tsp to 3/4 of a tsp per pound, then taste test. I don’t like too salty or too spicy so I am very conservative with my measurements. Experiment until you are happy with the flavours!! Good luck.

Thanks for your question. I’m making reference to the tradition of Baccala and pasta with anchovies and breadcrumbs and how the two go together.There is no Baccala in this recipe. For Baccala recipe,just scroll down.
@@ginasbellacucina4214 My grandparents made Bacala as a dish by itself, and Christmas Eve, we had anchovy sauce over pasta as it's own dish.
