Smoke the big steaks low and slow on a Meadow Creek TS70P smoker then sear it on a cast iron griddle. I have virtually zero butchering skills.

We threw Dr. Mac a party for his 80th birthday and I smoked 8 racks of spare ribs, a prime packer brisket, a couple chickens and we did pulled pork, corn bread, slaw, beans etc. we fed about 60 people. I used the Traeger rib rack to hold the ribs upright so I could fit everything in the smoker.

      Thanks! I love this smoker. No regrets about choosing a Meadow Creek reverse flow. It needs a lot of attention to run correctly, but any offset stick-burner does. It produces great smoked meat. It's not really a regret, because I bought this from a dealer and it was the only one they had in stock, but I wish I had a stainless shelf on the front. The expanded metal shelf is hard to clean. You could do four large briskets with big gaps for airflow etc., but you could squeeze six smaller ones on there for sure and still have good air flow.

      I think it's kind of silly to say that the monsters mentioned in the Book of Job are clearly dinosaurs. The Wikipedia article for "Behemoth" is actually pretty good and mentions that the monsters from Job show up again in Revelations where they're doing all sorts of non-dinosaur stuff like speaking, breathing fire, deceiving humans into worshipping them, marking them as members of their worshippers etc. Also, there only seems to be two - Behemoth and Leviathan, and they were created specifically by God to serve some sort of purpose in the divine biblical narrative. Seems like if they were dinosaurs as we understand them today, there would have been many, many more, not just two special ones, i.e. they would have been more like cattle or antelope or rabbits or something. Also, and this is a little spooky, as I type this response, this video has 666 views. 666 is of course the mark of the beast and is described in the Behemoth section of Revelations, Revelations 13.

    Hell yea brother. Virginia in December is hit or miss. Equivalent to your first LSD trip-things can go HARD right or HARD left, all dependent on a myriad of factors. But, very similar to every other state's musky fiends, we too live off of decent bourbon, copious amounts of advil and consistent heckling during the season. Get to the New River this year if you can... Less bourbon needed as it's hard to go a day without at least a follow.

    Manage the cook by the feel of the bark,, the color of the bark. You have a reverse flow cooker so it should keep even temps better. Make sure your Point is pointing away from the firebox. With a reverse flow the smoke goes under the tuners and back over the meat towards the stack - let the point take the heat as it comes back over the meat. This will give the flat a better chance against dryness
