From the beginning of the Ukraine war until June 2024, Lviv Vegan Kitchen served free, nourishing vegan meals to refugees in need. Now, as they relaunch, their focus shifts to supporting vegan soldiers on the frontlines. In an incredible new chapter, they are opening a charity vegan fast-food restaurant, with 100% of proceeds dedicated to providing meals for vegan soldiers.

Great convo with one of our plant-based pioneers. Miyoko's final comments about allowing plant ingredients to be their own thing is exactly the position I found myself in these past few years. The general pubic doesn't expect sheep milk to taste like cow milk, or cow milk to taste like goat milk, or chicken to taste like fish, or fish to taste like pig, or pig to taste like lamb, etc. We acknowledge and learn from previous incarnations of various types of foods, but they don't have to be the measure for all else to come.
