I mean in this game he literally jumpstarted reality by running we would lack the ability to comprehend that kind of speed

The trick to pull that off in a video game to make it playable is instead of making Sonic faster (and breaking the game), it should be done like in the movie. Make the game go SLOWER while maintaining a playable speed for Sonic. Sorta like a bullet time. Since the player plays from Sonic's perspective, they should also perceive the world through Sonic's eyes. Add some cool dilation effects while he's running and it will feel fast as well.

The Sonic game franchise is good if you are a fan of action-adventure platformers

I like to think Sonic has no limits, he just runs as fast as he wants/is necessary but doesn't overdo it so he doesn't hurt anyone.
