Hurrac is an important step in the production of cashew feni, a popular alcoholic beverage in the Indian state of Goa. It is the first stage of fermentation, in which the cashew apple juice is left to sit in large earthenware or plastic containers for a period of 3 to 5 days. During this time, wild yeasts in the air and on the fruit skin ferment the natural sugars in the juice, producing alcohol and carbon dioxide. The resulting hurrac is a cloudy, sweet and sour liquid with a low alcohol content of around 5% to 7%. It is often consumed fresh by locals as a refreshing beverage or used in cooking, particularly in traditional Goan dishes like fish curry and pork vindaloo. After the hurrac stage, the fermented juice is distilled twice to produce feni, a clear and potent liquor with an alcohol content of 40% to 42%. Feni is an integral part of Goan culture and is enjoyed by locals and visitors alike. It is often sipped neat or mixed with soda, tonic water or coconut water to create refreshing cocktails.
