We're cooking up something really simple tonight.
Hang out while I make a childhood classic of Eggs in a Basket sometimes called Toad in a Hole depending on where you were raised.
Pick out bread you like and cut a hole out of the center. I did this with a mason jar but you can use anything even a knife. If you want fun shapes a cookie cutter would also work.
Toast the bread on one side. Flip the bread, crack an egg in the center and cook that egg half way.
Then flip the egg inside the bread to finish cooking the bread and egg on the other side.
Add cheese if you want or on a whim I added pesto that I had sitting in my fridge.
Breakfast for Dinner is always a win.
