They dont undo logans ending. The reason deadpool goes to find logan is to find a replacement anchor beam because his universe logan dies 5 years in the future which is the logan movie. Paradox wanted to speed up that process and have wades universe get destroyed and have him join the sacred timeline. In the end when wolverine stays in deadpools universe the other logan already exists who is destined to die but what i think is with wolverine staying in deadpools universe the tva must have created a separate timeline without affecting logans one. Its kinda like how captain america went back in time to live with peggy but that didnt affect the timelines so tva didnt bring him in like they did with loki.

@@xxsemb I think in the end when they destroyed the time ripper and saved all the timelines from getting destroyed they must have fixed deadpools timeline or the tva must have helped in restoring deadpools timeline by maybe creating an alternate timeline parallel to his where logans death happens but doesn't affect deadpools one. Its a comic book movie they have their reasons for all sorts of outcomes.
