Hi, welcome to my channel, Joe’s Home Flavours is all about my cooking, my foods, my drinks and even though is primarily based on a Portuguese gastronomy and all it’s flavours, I will also be showcasing and embracing foods and drinks from all around the planet. As a food enthusiast my main goal with this channel is to bring all the flavours I replicate or create to the entire world so that everyone as a chance to experience what me and my family experience every day at our home.
Being a Portuguese national I thought it would be a great idea to make this a English language channel so that all English speakers have a shot at trying our traditional cuisine. Many know about our foods, breads, wines, olive oil, chouríços and other cured meats, etc. but few understand how all of it is cooked and prepared because the language barrier so I decided to make this a all English language Channel so that a greater number of people across all continents can watch it and understand all my flavours.

Bobo de Camarao is a dish tipical from the Bahia region of Brazil but you can find it in others states as well, some times with a few modifications or takes on it, for example some versions only use olive oil while the Bahian uses pal oil instead, I use both so have a crack at it and let me know what you think! I am curious to know about your smoker.. is that a European brand? Or can I find it in the US? How long were they in the smoker?
Hi, in Goa, India we make chorizo with bigger pieces about 3/4 inch and apply salt and tie it in muslin (cotton) cloth to drain all the liquid from the meat at least 24 hours and then apply all the required spices to marinate and then stuff the pieces into dried pig intestines. (The Narrow ones) and then hang them over a wood fired smoke for over a week. cheers
Draining off the water before marinadeing seems like a good idea. A week over a smokey fire seems like alot of smoke and heat? Is that continuous smoke?
What pork you use in Goa? Is it Yorkshire or Home grown or Farm pigs?

Very similar to Sri Lankan Lingus. Ours is a remnant of the Portuguese colonial times from the 1600s haha
