You should check out the book Red Smoking Mirror by Nick Hunt, which revolves around the relationship between the Mexica and Muslims (and Jews) in an alternate history where the Caliphate of Al-Andalus didn't fall and it was Muslim traders, not Christian slavers, who "discovered" the Americas. Hunt presents both sides VERY well despite being neither Mexica or Muslim himself.
