Why should the normal shouldn't be at the centre?
@@VivianBoakye-Ansah the refracted ray might go out of the glass block should the incident angle increase hence making is difficult to trace the emergent ray

Sir please for graph, the manual said we should plot current I against voltage V. Please I want to know the one that would take the y-axis
Either is correct, but it depends on what you are finding. if you are finding Resistance then you plot Current against Voltage, on the other hand when you are finding Resistivity you have to plot V against I. Especially when you have been given Cross Sectional Area.
