This looks really on me I'm going to add to my list to try. Another alternative is to pour it into a pan with a tight fitting lid and turn the stove down really low and give it time to slowly Steam and cook and then you won't have to flip it

I'm definitely going to make this very soon and I'll use the exact ingredients but ill add bell peppers to it and have it with toast and tea for a cozy breakfast on the couch with a blanket and a Minecraft game play 😅. Thank You for the idea Love!

Many cultures make this dish (or very similar)...I often make an Italian Frittata which is very similar,, tasty & great for using up leftovers.

A bit more seasoning and some cheese is the only thing missing

My father just called it potatoes 🥔 and eggs 🥚. He would also add bacon 🥓 and cheese 🧀. I still make it every now and then. It's delicious 😋.
