    Nice little yeast experiment. The beers look and sound fantastic. I've seen you get good results from dry extract in the past. So on the fermentables front, you've once again illustrated perfectly why I've preferred using dry malt extract for extract and partial mash beers for the last 8 years. Same for the color. I've had success using about 3% Melanoidin for a bit of that decoction flavor. Good to know the amber dry extract (which I love) will do that too. Great video. You've also showcased once again how simple homebrewing can be. Cheers

      I like to play around with at least one parameter on most brews, so yeast gets a good run. Got a few more coming up. Dry extract has always made good beers for me and probably should do more of them, which is where the EZ Extract brews have come from, a mix of grain and extract; those first few beers have all been good, taster still to come on the wheat ale, which is on tao and drinking very well.

      I've never detected twang from dry malt. I've done a few all dry brews over the years with great success.

    How big of a problem would it be to do this without cold crashing? Will just getting the bottles really cold be enough to prevent problems?

      You neeed to cold crash to force co2 into the beer. If you bottle at ferment temp, the beer will only hold around 3-6psi of co2, nowhere near enough for bottle carb, you can overcome that by adding a half dose of priming sugar to the bottle. You will also get a lot of foaming whilst bottling, you could do it but it would be fairly messy and a tad difficult/frustrating. Try it and see, but I seriously say 'cold crash'; and not just because it will be easier, it clears the beer and makes for sediment free bottles.

      @@dutchdiveking yep, my response was assuming ferment under pressure. If you don't use pressure, you could push warm beer to bottles a lot easier as they wouldn't be gassed, bottle and carb as normal. Bit pointless using a pressure fermenter if you can't take advantage of pressure and temps.

    they are a game changer -one of the best pieces of kit in the brewery -use mine as a tap (with pouring attachment) & for bottling (pet & glass & flip top) when required -usually do a double flush of CO2 when bottling.

    Are u doing a video concluding that extract beer twang is impossible to remove ? I think its only good as emergency beer. I have 1 or 2 homebrew then drink commercial beer after that just to save money. . I couldn't drink extract homebrew every night or all night.. It used to taste better back in the 90s but maybe my expectations were lower. The dark beer and stout seem to be bearable and less twangy. Also dark commercial beers are getting expensive now, so i might just keep making stout. .

    I just recently brewed this myself although i did sway off the recipe.. i added more ginger and used 2 large jalapeno.. it is a seriously nice brew and i look forward to playing around with it for future brews

    I just put one in the fridge aged 2 yrs. Going to be interesting. Still have 3 quarters of a case that’s been sitting. Been back into the craft beer after a break of mainly just German beers lagers wheat beers etc.. BB around a yr ago. Means little to be though as some of the best beers I’ve drank are after bb.

    Do you need to leave the bulk primed wart in the fermenter for another couple days? Or just bottle straight away ? Cheers.

      bottle straight away or the yeast will eat the sugar and just increase the ABV, you need that process to occur in a closed evironment to contain the co2.

    Fantastic video. Great helpers. Very well-behaved. Good to start 'em early being around beer & brewing. It's an extension of having them help to cook meals, or taking them to a pub where adults are eating and drinking beer & alcohol responsibly. Looking forward to seeing how the brew turns out. Cheers

      The young fella is full of questions, he loves getting the grain in and checking it out. We go past the Flour Mill every morning on the way to school, checking if trucks are delivering wheat, so he's intrigued about how flour is made. He milled the grain but I stuffed up the footage, he loves seeing the cracked grain and the flour.

    I done one of these brews and it came out really good better then a FWK in my opinion I was thinking of doing a whirlpool in the next one maybe topping up the water untill the wort is around 80 degrees then whirlpooling 🤔

      certainly have the abiltiy to whirlpool just like any brew. Just add enough water to the boil to cool to 75-85° and carry on like any other brew. Yes this is a better option than FWK's.

      @@buildcoast There is work to be done around water and balance with the grain/malt and dex but when the brew day is only 2 hours and clean up is a breeeze, it's easy to play with your recipes. I won;t be going to this as my main brewingmethod, but it certainly opens up some possibilites to brew when maybe I couldn't fit it in otherwise.

    I have found twang even using DME, hops, and various yeasts. I am just living with it. Mostly doing 3 gallon all grain now. Thanks for the video.Cheers 😀 👍 🍻

    I actually emailed coopers recently. Coopers in the 70's did full FWK hot cubes. Production stopped because it was a logistics nightmare with 20-23L of fresh wort. I urged them to trial it again as the market is aware of the decrease in quality in the process of making extract. I also pointed out that shipping would have to be easier as they ship their product to everywhere including woolies. Imagine being able to buy a fresh wort at the local supermarket!

    Idea? Burnt malt taste from reducing the liquid to a syrup during processing. It's got that burnt toffee twang?

      Maybe, I dont really know, but if I would make liquid malt extract I would vacuumdistill the wort wich would lower the boilingpoint considerably thus not affecting hopsbitternes and so on. And it wouldn´t scorce or burn.

      It would certainly seemit's a process thing, so maybe some producers are heating higher or faster than others producing the twang.

    Thanks for all the investigation LJ this has been a very interesting series to watch. It would have been great to have a second drinkers perspective along this journey or some blind tests. As a future video idea, have you thought about testing one of the fresh wort kits from your local HBS? It would be interesting to see if you discover twang there as well, though appreciate this is an entirely different product.

      Yes a second or third opinion would be good but it's hard to get people togther in my locale. I've done some FWK's on the channel over the years, I can;t access them easily so rarely get them, I would like to do more but just a bit inpractical.

      It would be harder to pick up in a sour. I did a Gose from a kit, it wasn't great but don't remember how the twang was... that beer has been sitting in a keg on Brett for about 9 months... might be time to crack a small amount.

    I agree that the 2021 and 2022 weren't the greatest but I think 2023 was actually quite tasty. I regret not having bought a 2023 carton.
