This shop was close by health department last week Early october, 2024. I The news publish in The star, NST, china Press, Malay Mail. I didn’t know which I bought the popiah on September. Now when though of this I feel wanted to puke and disgusted. This owner must be ban for opening food stall forever. The shop disgusted with rat Pooh and all foods ingredients on the floor and rats breed everywhere.

I recently ate Kuala Lumpur style Hokkien Mee in the United States for the first time. And, this version in the video from Petaling Street has a lot that's different about it. Being cooked over charcoal as it is. I'm sure that makes a big difference in terms of the smoky flavor. Wok stir frying with charcoal is non-existent in the U.S. Plus, the noodles are thicker here. I can see that. Also, the inclusion of pork lard is undoubtedly a game changer too. Pork lard is not used, of course, in the United States. I noticed too that the chef held the wok spatula upside down and pushed the contents...agitating it that way. Rather than holding the spatula conventionally and using a lifting and scooping motion. I don't think it makes much difference either way. But, yes, keeping the contents moving and preventing sticking and burning is key. In the U.S., chefs love to use the "pow" action where they lift the wok off the flame and toss the contents in a jerking motion. Sometimes, the oil vapor ignites during the process; and, flames lap up the sides of the wok. It looks impressive. But, I've always wondered if it helps or hinders the formation of wok hei.
