    Don't need water, over lids, in canner. It syphons water from jars. Learned the hard way. There is steam canning. I am learning so much. Thank you. Planning another batch. Remove rings, after 2 days. Don't stack any home canned jar. Pressure on lid.

    Just when I thought I have seen it all! Actually my daughter made a tripod trellis out of last years sunflower stalks and used panyhose to support the melons. She figured the sun get through them. Worked out great.

    Why do you need cleansers, especially one approved by the EPA? People are gardening now because they DONT trust the government, not because they do. Just washing in water is fine unless you use pesticides.

      The things we use here have no chemicals in them... I wash them because the sky here is loaded in chemtrails and believe it or not, the water is DISGUSTING once I wash them. Yes, it sucks that we even have to worry about that now with growing our own food. I have many friends in California who lost their entire gardens all in the same night with wilt and black burn spots... My family switched everything in the house over out of the big box stores... for the reason you mentioned above. Its been the best switch we ever made along with growing our own food!

      I have had these on the shelf since we canned them and we are still eating them and they are still good! The consistency is like a cooked carrot, not mushy but not hard. I have not yet canned meat but I am planning on it this year!

    That is a nice bunch of celery especially for you first experience. Are you going to grow it again next year? The nice thing about our snakes here is there is only really one or two species. Yeah I know they can be intimidating even if they are not. Be safe and watch out for snakes!!

    Europeans have been water bathing ALL foods forever, likewise. the Amish and Mennonites. Aquick boil after opening the can kills any pathogens including botulism.

    Nice looking salsa. I'm just waiting for some more tomatoes and chilies to ripen up to make some. I was wondering when you were going to add your chilies and then saw you add some chili powder along with other spices. My wife and I like our salsa chunky and spicy also. Do you keep your vegetable scraps and liquid for stock? We keep ours along with chicken carcass to make stock. I hot pack all my meat and vegetables with homemade stock.     13:11 I do pretty much the same thing but i add dried chilies to all my jars because both my wife and I like them spicy. I also add dill from the garden and pickling spice from Bulk Barn. I also use recycled pickle jars and salsa jars for the ones I give away because of the price of canning jars. I had to buy cucumbers this year because the rabbits or squirrels ate my plants before they produced any cucumbers. Its nice to see someone from Ontario also. Take care.

    Hi! I'm learning to can for the first time and am working up the courage to do my potatoes this week, I'm wondering if now (since this is about 9 months since you posted this) if you've tried your potatoes with the vinegar? I have heard so much back and forth about this (but I bought the vinegar anyway and also i will use the himalyan salt!) and also the timing for processing, you said 2 hours and I'm at 6,000 ft elevation (colorado) so do I just add an extra 20 minutes? So so excited to can!! I'm hoping to do it this week, I'm overthinking everything but really excited to learn and try! TIA!

    Just pressure can. It’s low acid food and this is what the USDA says to do. And it doesn’t take anywhere near two hours or three hours.

      If I had a pressure canner I would use it but I don't, so I just do it this way. It works just the same, seals the food to preserve it! Isn't it so cool that we can make and preserve our own food, if we truly want to? I love it!

    The reason potatoes need to be pressure canned is because a water bath does not get up to the temperatures needed to kill botulism spores, but pressure canning does by increasing the pressure and therefore the temperature. Many foods are safe to be water bath canned, but they are foods that have a higher acid content, which does not allow the botulism spores to develop. Adding vinegar to your potatoes as in this video MAY be one solution. But as a general rule, if you water bath low-acid foods long enough to kill botulism spores, you end up with mush. That is the basic reason some foods are pressure canned, and some can be water bath canned--their acid content. I have watched people water bath can green beans using hours of water bathing--mush! Just because you CAN do it, doesn't mean you should, or that if better and safer methods develop over time, they should not be used. If you get appendicitis, do you have surgery or do you call a witch doctor? If you have an infected wound, do you say magic words or take penicillin (ask all the WWII survivors!). Just because your parents did it, or grandparents did it, does not mean there is not now a better and safer method. God gave you brains; use them!

Probably in the fall, (I'm in New England)....when we as a family get together a little more, kids, Grandkids, and now a Great Granddaughter....and she is just that, so great. You young lady, are doing the right things, by helping and encouraging others to live the right way...God's way. He says "Come out from among them"....meaning, we don't follow big Corporations, or the cabal-driven FDA, who allows big Corps to poison our food, mis-label food on purpose, lie and allow garbage to be fed to our children....for generations now.     I live much further north in MN and have never had a problem as severe as you do. I've grown Broccoli before, but have not had that many or that much damage. When I cut the Broccoli to bring in and wash it, there's very few worms and I can just fish them out in the water. What ones are left are killed in the boiling water for parboiling it. I tried that very expensive pest protection material once and about a month or so later it was all in shreds from the wind! Never again! I hope I never have as much damage or problems w/these pests as you do though.

      I dont have any heads formed yet, only the leaves. This spray worked and I have not seen any worms since! Praying I still have an amazing harvest

    Those squiggly things on your garlic are scapes ... which when they mature will form garlic seeds. If you dont cut off the 'scapes' your garlic wont form garlic cloves of 'any' size. They only form on 'hard neck' garlic and should be cut off as soon as possible. The fresh cut scapes are very good in salads. ;-)

      I opened one up to see what it looked like and MMMMMM I can see why people call them a delicacy! I have a couple garlic outside that I did like you said and cut the scapes off! Will be harvesting them soon and I have seeds from scapes from last year also ill be planting this fall
