If you put your dough in the fridge for a couple hours after the rise before shaping it’s so much easer to handle 😊this is 2024 now and I make sourdough bread this way I mix the dough and let it rise overnight in the fridge the next day shape and let rise and bake 😊
I feed leftover pumpkin to my dogs. They love it and it’s good for them in small quantities each day. Sometimes I give it to them in their dog dish or I freeze it onto a lick mat and it takes them a little longer to devour it.😊Just make sure it’s pure pumpkin and not the canned pumpkin pie filling as dogs can NOT have the spices in the canned filling!

Hi.. I'm new to sourdough bread. I've tried ypur recipe. My question, when I did the stretch and fold, my dough felt so tacky. So hard to make it smooth. Is there something wrong? Or my starter is not strong enough? I have to do that 3 times, but nothing happened. Sorry for my bad English, i hope you get what I mean 🙂
I have a question. How much of your original starter did you use? Like, I know you fed it water and flour but how much did you start with after you discarded?

Hi!! Nope, not sure why some people soak them. I don’t have any issues skipping soaking! They still become soft in the bread :)

Yes!! I do then let it come up to room temp though. I don’t like baking straight from fridge, personally!

I like to slice it, and put it in a Tupperware bin! Sometimes I even freeze it :)
Hey Jessica! That’s my question too… can you do a cold retard in the fridge? How would that work? I generally bulk ferment, then pre shape,shape and cold retard, score and bake.
I made this. It took 50 minutes to bake it. Oven was at 450F and I had a thermometer to verify. I can't see how anyone could bake it in 25 minutes. Turned out good otherwise.
Wowie! It’s very possible that the oven in this house ran hot (I have since moved from the time filming this) but wow, double the time is definitely significant!! Truth be told I haven’t made this recipe in a while, just fell out of the swing. I will have to test in my current home’s oven and see if I find a difference!

I’ve used lots of different brands, but my favorite is definitely King Arthur! Only thing I would say to make sure of is unbleached unbromated and unenriched 💛
I've seen other sourdough sandwich recipes and they had oil in them. I like this one better it doesn't. It's almost an artisan recipe just shaped differently and has milk. I will try.

A simpler way is to just line the tin with parchment, then put the shaped loaf in the in. You don't need the step with the towel. Looks good otherwise.
hi, may i know what is the temp over at your side to leave the dough outside for proofing over night? Roughly how many hours?
Hi! We kept our house around 70 degrees. It proofs on the counter for anywhere from 10-16 hours without issue (for me)!

What was the point of flipping the bread? Couldn’t you just leave in the pan and bake? Also creating tension at the shaping stage just ensures a top ear and for sandwhich bread we don’t want that. Shouldn’t we not do that and not lame them?
You can truly do whatever your heart desires!! What a fun experiment sourdough baking is. Trust your instincts. At the end of the day, I’m happy to make bread! I proof and flip this way because I’m in the habit from other recipes. If you think it’ll work the same to just leave it in, and bake or not create tension/score then go for it! 💛

Being a woman of a certain age, I have to have my house cooler and I’m wondering if this is why my Sourdough Sandwich bread and buns are too dense. Is my house too cool at 65 degrees? Other than that, would using a stiff starter affect that?
Hi Lisa! It could be too cool! I wonder if you could try proofing in your oven with just the oven light on… that’ll increase the temp enough to give you a better chance!! Also maybe misting the dough before your bulk proof. Let me know how you get along! 💛

Could you add some brown sugar too to the cinnamon mixture?
Yes! Not too much though, the sugar will add moisture to the dough and it might not bake properly :)

Question for your recipe does it have to be whole milk or can it be like 2% or soothing like that?
2% should be fine!! Whole milk is just what we use in my house 💛
