Doesn't it just means the juices escape the meat? If you weigh two steaks straight after taking them out of the pan, cutting one straight away and not cutting the other, both will weigh the same after 10 minutes. The difference is that all your juices are on your cutting board rather than on your plate
You make a solid point! When cooking meat, the heat pushes juices from the center to the edges. That’s why resting is key! During that time, those juices flow back into the center, giving you a juicier steak when you slice in. Sure, some juices might end up on the cutting board, but resting helps keep more of that tasty goodness inside. So, while you might lose a bit, it’s all about keeping as much as you can. Cheers to juicy steaks! 🍽️

If you could only use one sauce for your ribs for the rest of your life, what would it be?
Good idea on the two hooks. I have cooked ribs many times on my Pit Barrel just using one hook per slab, so I will have to try your rotation method. Also, a good time to add the apple juice. Good video - Great job! And those ribs looked GOOD..
I'm SO glad that you liked the video!!!! I came up with the double hook method just by messing around. From previous cooks, I had noticed that if I left the same end always facing down that it would become over cooked. Through a little trial and error I was able to come up with this idea.
