I noticed you guys didn't take any of the meat from the sheep, shame. I myself also got the same impression from RUclips videos that the meat is gross and inedible. My wife was drawn for a tag on Ft. Bliss - McGregor Range and shot her first Barbary Sheep here in NM. I talked with a guide prior to daylight opening morning of the hunt who was in with a client and he told me how chewy the meat is (The tenderloins are like chewing bubble gum). The guide recommended I turn it into sausage. I took all of the meat to the butcher and had sausage made, 50% hot Italian - 50% bratwurst, and the meat turned out Amazing!!! Thanks for sharing your hunt!
