Hello! Al here. It's been awhile. In this video, my cousin Lily aka @darthteapot and I attempted to make one of our favourite dishes at Japanese restaurants, a Chicken Katsu Don and a Gyu Don -a Japanese rice bowl! guanciale pecorino romano pasta uova pepe , no garlic no olive oil no beef no parmesan. This is malaysian carbonara, no italian carbonara. Sorry!

@@aldotjpeg Hi, as Mercurio said carbonara is made with pasta (spaghetti is the most popular but i prefer rigatoni), black pepper (toasted and crushed right before you use it), Pecorino Romano DOP and guanciale (cured pork cheek). I don't know if is possible to find guanciale near you, you could try with cured pork belly as pancetta or bacon (not smoked is better in my opinion), it won't be the original carbonara but a very good alternative. Regarding the garlic: i don't know why all around the world the Italians recipes are full of garlic, thats not used a lot in Italy indeed, in carbonara remove it for the original version. I'm really proud of you cause you didn't use cream (very popular in online recipes), that's blasphemy in my country 🤣. The oil is not used because guanciale is really fat and you don't need it. The procedure is not difficult but you should take care to some steps. Pasta: To cook pasta i usually use 1/10/100 ratio, 1L of water, 10g of salt, 100g of pasta, that is my favorite combination for pasta in general but carbonara could be very salty because of guanciale and pecorino romano so you could use 3-5g of salt (if you find it too unsalted you could add it later and fix it the next time you cook it), boil it in hot water and remove it al dente. Guanciale: Cut guanciale, i prefer to cut like parallelepipeds 0.5cm x 0.5cm x length of the piece of guanciale but less than 5 cm (be sure that you have lean and fat parts in every piece) , you can dice it if you prefer, there is not a right way to do it. Start to cook it on med-low fire, the fat should melt gently and guanciale should became crispy outside and soft inside don't overcook it or you will get a dried piece of meat, be careful. Don't waste the melt fat, you can use it to add flavor to the egg sauce. Pepper: 4g every 50g of pasta ,toast the pepper full grain a few minutes (you will smell the black pepper flavor, i love it) and crush it, you don't have to powder it, be careful. Eggs: Use 1 egg yolk every 50g of pasta and 12g of egg white every 50g of pasta, put them in a metallic bowl (use a temperature resistant material if you don't have a metallic one) and mix them. When your cream is well mixed add 40g of grated cheese every 100g of pasta (pecorino only for the original recipe, but i really like a mix of pecorino and parmigiano reggiano, 25g Parmigiano 15g Pecorino), you will get a very thick cream, don't worry. Warm up some water up to 85-90°C and start to warm up the cream bein-marie, continue to mix it while warming up and when you reach 61-62°C in your cream immediately remove it from the hot water and put it in cold/icy water to reduce the temperature to 25°C, repeat the process 5 times after that let the cream bowl in cold water until you need it later. The water must not get in contact with the egg/cheese cream. When your cream is ready you can add the melted fat if you want. Finishing: Remove the pasta al dente and save a glass of water, that is full of starch. Put pasta inside the cream bowl, add black pepper, 1 Tablespoon of water every 100g of water and start to mix. Add guanciale and you are ready to serve it.

@@aldotjpeg you can use cured beef as the one in the video. Fresh beef (you need a very marbled cut, deboned short ribs for exemple) cut it in pieces 1cm x 1cm x5cm cover with salt 2 hours, wash it carefully and use it. That's very good with truffle grated on it when you serve it. When you use fresh meat you can smoke it if you like the flavor Alternatively you can use tuna cheek (or any other fatty cut) for a fish version, cold smoke it a little and then cook it in the pan with some oil it must be crispy outside a juicy inside. In general you need something with a strong savory taste, a good amount of fat but most importantly something that you like.
