Short Ribs, Pesto Tapenade Potato Salad, and Asian Slaw for a Late Summer BBQ
Not that it matters much here in the Phoenix area, but we are coming to the end of summer. So we decided to do a late summer BBQ, with some short ribs and a couple of fresh sides to go with it. We’re comin’ at ya today with some super simple pesto tapenade potato salad, and also a super simple Asian inspired slaw that my wife really loves. Enjoy!

      I lived in Japan for a very long time, and didn’t get to watch much while I was there. 30 years ago I used to root for the 49ers (since they were closest to us) and I’ve always rooted for BYU, my Alma Mater. When I was going to school 40-45 years ago, they were great.

    most restaurant's like 75/25 for burgers i myself use a 73/27 way juicer and not as tough as 85/15 and more flavor if cooked on a gril most the fat cooks out anyways or alot of it atleast

      @@RamblersDiner yeah everyone prefers different things as well but the higher fat content will give a cruncher burger try both when you do it again see which you prefer but yeah 80/20 is more available unless you find it in the tubes cause I don't even think Walmart carries it besides in the tubes, but I get mine from local grocery store makes it in the trays still

      Oh yes. On purpose. For breakfast sandwiches I cook them to about the same doneness as, for example, an egg McMuffin from McDonald’s, maybe just a tad softer.       The egg ring device is a Blackstone product. I bought this one at Walmart. It comes as a set with one of these, and two Omelette rings (rectangles, actually). I love them and use them all the time for breakfast sandwiches and omelettes.

    Great recipe. The sauce is absolute fire! So many things I would use it for. Although, next time I make this chicken, I’m gonna marinate it in pickle juice for a few hours first. I think it’d be a nice touch.

    I would love to see your thoughts and impressions about the Halo Elite 4b. I'm considering the halo vs the gridiron 36, they are similar but different. Im pretty much an amateur with my blackstone 28, I want to move up to a 36. The Halo seems polarizing in the meta verse, the Gridiron price is appealing, the weber elite 36 is the latest kid on the block, but expensive too.

      The Halo was on my short list when I discovered the GridIron 36. In fact, that is the direction I was leaning. That said, I am a member of a few facebook groups, and for purposes of this conversation, specifically the GridIron group, and the Halo group. A lot of folks on the Halo group have been complaining about rust here lately, even when they’ve had the lid down and the original Halo cover on it. Personally, I don’t ever have any issue with rust, because my rigs are always under a patio or outdoor kitchen roof. We do get some high humidity here in Phoenix during the monsoon season, but I still have had no issues with rust. But I think one of the problems with that unit might very well be the giant opening it has in the back for you to expel the grease, without a decent way to close it off from the elements when not in use. Now, to “operability” issues. I have never personally cooked on the Halo, and I’d love to give it a try sometime. But going by word of mouth (RUclips videos) the Halo burns very, very hot. I’m not sure that you actually have the ability to cook on low. The GridIron DOES have an actual low setting that is, actually, lower temperature than other makers’ griddles cannot achieve without turning it off. I guess one has to ask himself: how much heat do I need? If you live in a very cold climate, have a good patio cover, and intend to cook year round, the Halo might be a good unit to have. Now, a word about “upgrading”. Most of these griddles will achieve the same thing for you, with a few minor differences. For example, with the GridIron you have the lower end temps that are easy to achieve without turning off the burners, and it still gets plenty hot for smashburgers and steaks on the other end of the heat spectrum. I’m gonna be completely honest with you here. I don’t work for any of these companies, so I feel that I can. Unless you plan on doing a RUclips channel, but still wanted an upgrade, I would consider very carefully exactly what you want to achieve. For example, I already have built in side burners in my outside kitchen, next to my grill. That is one reason I went with the GridIron. It had some things that were beneficial to me and what I am trying to achieve, like the better temp control on the low end, grease groove with the hidden grease trap (to keep the ugly grease trap out of view when we shoot these videos), and a griddle leveling system second to none. So all of that said, another unit that I had my eye on before I bought the Gridiron was this blackstoneproducts.com/collections/griddles/products/28-xl-griddle-w-rangetop-pizza-oven-bundle. Why? Well, it is only 28 inches, but it has 3 burners instead of 2, and, it is deeper, which gives you almost as much cooking area as the traditional 36” griddles. But a couple things I liked about it: 1) it has not one but TWO side burners, 2) it is stainless so it will look a bit nicer on the patio, and 3) it comes with a pizza oven (I would have sold it or given it to a friend, because I have a BS pizza oven and a Halo Versa), and a boatload of accessories. 4) while it is not good for RUclips filming, the rear grease trap has something to be said for it, especially for less experienced cooks. While allowing the grease to build up in the back for shallow fries has something to be said for it and which can be achieved easily with the GridIron, pulling the hot grease toward you to discard it can be dangerous, especially when you are less experienced with that method of grease management. Finally, You mentioned the Weber. I think they had some problems with an earlier model and the new model aims to correct those. Beyond that, I don’t have much to tell you. It is a good, but expensive brand. As to my recommendations, I would look again at what you want to achieve. YouCAN use a fry pan or a pot on the griddle top, but it isn’t very efficient. If you expect to rarely, if ever, use a side burner, then yeah, save yourself $500 and stick with the GridIron. It is a very solid unit and I have no complaints with it at all. Just be careful with pulling the grease toward you, and go slowly. If you don’t have a side burner, and expect to need one frequently, that changes the discussion, maybe.     do you know of a conversion kit for natural gas that works for this griddle?

      This is a complicated answer: Yes, and NO. They sell a hose to hook it up to natural gas, BUT the orifices of each gas valve also have to be drilled out. If you just attach the hose and call it done, that would be a serious hazard. I would not do it. Now, they also sell some replacement valves for natural gas, BUT, the website wasn’t clear on which units the valves were compatible with. If you are handy and feel comfortable drilling out the orifices, it can be done. I have a Halo Versa pizza oven. They come prepped for propane, and you can get a kit to switch the orifices and the hose for natural gas. That was an easy process, and I was able to do it myself. I’d personally feel a bit less comfortable drilling them out. That said, there is a RUclips video they provide with instructions on how to do it. Just go to campchef.com, find the GridIron36 page, scroll down to accessories and click on the propane hose. The page that pops up will have the natural gas hose, so click on that, and then you should be able to find the instructions on that page. If you do end up going this route, please do let me know how it went, how easy it was, etc, so that if the question pops up again, I can be more helpful. Thanks for watching!

    I've been shopping for a griddle and the Gridiron 36 is currently at the top of my list. I know there are some concerns about the temperature range and the griddle not being hot enough on high, do you feel it okay? Also I have concerns about the scrap "chute" and how dirty that thing will get with all of the grease and food remnants being pushed into it. Is it a problem? Thanks for the vids, I have been watching to see how the griddle performs over the recipes but I appreciate what you are doing

      Hey there, thanks for watching. First let me say that rather than “concerns” about temp range, I am quite happy with it. I have four griddles: a 36” Blackstone, a 22” Blackstone, a Pit Boss Sierra (3 burner), and the Camp Chef GridIron. I actually like all of them. But if I had to choose JUST ONE out of those, I would choose the GridIron, precisely because the heat “range” and control is better than the others. So far, it has cooked quite evenly when all burners are on at the same setting. Further, I can actually cook an egg on it without turning it all the way off, unless it has been on high for a long time…just turn it to low and the egg cooks just fine, no scalding. I was also concerned as to whether or not it would get hot enough to sear a steak. But, you may have seen my “can it sear a steak” video…and it did the job very well. I had it on high, and I actually ended up overcooking it slightly. That is my fault though. I don’t typically cook steaks on the griddle…I’m a grill guy when it comes to steaks. But yes, it certainly gets hot enough for pretty much anything you want to cook on it, AND it will cook on low for the things that should be cooked low. My Blackstones must be turned off, if they have been on, even at low, for any period of time, whether it has been cooking or just warming up. My Sierra does not cook evenly, and one side of the griddle will scream in heat while the other side isn’t so hot. But I like it for cooking stir fry’s because of the non-stick surface. I do not like to cook pancakes or eggs on it, because you have to use those thick nylon spatulas that are difficult to get underneath more delicate foods, and the same applies for smashburgers, because you need a metal spatula to get underneath them without tearing off the crust you are trying to achieve. All of that said, I did a teriyaki cook on the gridiron the other day, and the sticky sauce came right off, because I have it pretty well seasoned. Now, if you are like me, and have the geekiness and the resources to be able to have different griddles for different jobs, that is a nice problem to have. But if you really only have the real estate for one griddle, I would say the GridIron is a really good choice. Your other question about the “chute”. Yes, it can get a but grody. But, it is easily cleaned to a sufficient level. For me, when I use water/steam to clean off the griddle, I am also using a few paper towels. I can just stuff that steamy paper towel down the chute. It does help to have a flexible brush (I have one that came with my smoke tube that I use in my smoker). That way, you can push it all the way thru and it will get most of the gunk (you really don’t need it to be spic and span…it is a trash chute of sorts anyway). It does get clean enough. Just be careful that your bucket isn’t full before you do that, so the bucket does not overflow. Hey, I hope this helps you make a decision on which griddle to get. I see that the lower temp can likely still cook eggs and pancakes and the med/high will also do a good job on smash burgers and steaks. I have the 22" BS also and the thing never gets below 450 or so on low. Blazing hot and essentially useless to have a knob since it is low or off for me when cooking anything on it so far. The chute thing is a concern but I assume it is of a material that can be just spray hosed down if needed. Thank you again for your videos it helps a lot when people are trying to make a decision on what works for us. #campchef @campchef

      We moved to Gilbert from CA a few years ago. Had to buy a little place up in Show Low to keep cool. We’re up in Show Low as I write this. I don’t think I could live here year round. We’re thinking of looking up in Flagstaff at some point…thinking the experience there may be a bit better than Show Low. Hey thanks for watching and commenting! Sure helps my little channel grow!

Take a road trip and stay at little America or the American 66 which was just remodeled in period correct designs, it's a small but cute little place to stay
