    Leave both vents fully open when using the Vortex. After all, you're using it for HIGH HEAT so, get it HOT! I even crack the lid to get up to 600F. Put your wings on a wire rack in the refrigerator overnight then, spray with duck fat, add rub, put on grill for 40 minutes and you're done. No flipping, respraying etc. I check them at 30 minutes just incase cause like I said, I'm running about 600 degrees

    I love using B&B charcoal but have found out that since it’s already infused with oak or hickory that it’s no use in using any other wood chunks like fruit wood for additional smoke flavor. You won’t get any because the B&B overpowers any other wood. Have you noticed this?

      First, thanks for watching! It’s a valid point you make. That’s why I use lump in the vortex when cooking chicken…that way apple wood will prevail. It’s tough to get flavor from a wood when the coal is infused with something stronger. But I can definitely tell when I add more oak to the B&B when I’m doing a longer smoke. B&B does a good job but when I want really good smoke flavor, I’ll add more. Thanks again for watching!

    I've tried a few popular lump charcoal brands... My favorite so far, after 8 years of Kettle cooking, is Jealous Devil. Some of the lumps tend to be pretty big, but easy to break up. My second favorite is Royal Oak.

      I always use webber briquettes and find them fantastic for low and slow cooking but have never seen any American you tubers using them,is their a reason?

      @@danielbackshell6936 Great question. They are costly to get them here. From what I can tell they are only available online and have to be shipped internationally to get them. They aren’t made here so they have to be ordered and shipping would be insane. Now, having said that, if someone else knows more than this about Weber Briquettes, please chime in. My research in the past has yielded no results in country.

    When I bought my Weber Performer Deluxe a couple months ago, I bought B&B. It worked just fine, but It felt like the briquettes were too big. When that ran out, I replaced it with Kingsford. It might just be in my head, but it seems like I can more evenly fill the baskets and distribute the heat with the smaller briquettes. Oh, as a side note: I thought I was being clever by buying a big grain scoop to get the charcoal out of the handy bin, but for both brands I've tried thus far, it doesn't work as well with charcoal as I had planned.

      Ha! I feel ya…I tried something similar….a scoop of some sort..nope. I couldn’t get the nose of the scoop to consistently get under the coal to scoop it up. Your reasoning on the size of the briquettes is solid. I can 100% see that being an issue. I like the bigger briquettes because I smoke more than I grill and whether it’s the snake method or the slow n sear or whatever method/device, I like the slightly larger ones.       Kingsford is a fine brand! I've just gotten used to B&B and love it. Plus, its so cheap from Wal-Mart and ships for free too! I stay away from any charcoal that has an accelerant in it,,i.e. Match Light. The infused lighter fluid puts an "off taste" on your meat. Have fun grilling with charcoal!

    looks like there would be a build up of schmootz on it. I had one in a wsm. mess to clean even on hot burns. plus i don’t think this would be good for slow cooks only fast cooks

    Nice. What type of wood chunks do you use? Does the kettle get hotter when the wood chunks catch fire and burn or does the spider grill fan system keep that in check and keep temps where it is set at? Did you use any tallow in the unknown with the foil boat, or would be to much liquid? One more question, what food warmer do you have for the 12 plus hour rest/hold? Thanks

      Great questions! As a general rule, I use post oak for beef and pecan for pork and apple for chicken. Thats just a general rule of thumb for me. I love both oak and pecan and will use both with either protein though. The temp does not spike up when the wood chunk starts to burn...the wood actually really only smolders as the charcoal is only smoldering too. There's not actual flame that ignites the wood. So with or without the Spider Grills device, the temp does not spike.I did not use any tallow with the foil boat. I wanted the fat cap to render even more and I wanted it to get crispy so I didn't use tallow. As for the food warmer, its easier to show you than type it all out.     Great video! I've been making briskets as you made the standard way on the Weber kettle for years. Last summer I bought a cheap offset off Facebook marketplace, as I watch a lot of BBQ videos, and I wanted to give the offset a shot. I like that I can cook a lot more food on the offset; however, I thought that my Weber briskets just taste better! I thought maybe I was doing something wrong on the offset, but this video just showed me that I'm just doing everything right on the kettle! Thank you.

      Thanks for watching! Yep, I agree...the offset allows you more space to smoke more food at one time...but the kettle makes as good or even better tasting at times. I love my kettle, just wish I could fit more on there. Instead, I just have a bunch of kettles! Ha! Thanks again!

It basically turns the kettle into a set it and forget device....so you get the ease of a pellet grill but the smoke of a wood/charcoal smoker.     I had no idea you could smoke a brisket on a Weber. I recently made my first brisket in my cheap electric smoker and it came out with no bark whatsoever. I've since learned that there isn't enough airflow with my model and thus it's too humid inside the cabinet. I don't have the space or funds for an offset smoker, but I do have a Weber and a slow-n-sear!

      Thanks for watching! Absolutely you can smoke a brisket on your Weber! My biggest advice is to leave the top vent open as much as you possibly can to get as much convection as you can. Use the bottom vent to control incoming air and temp. Make sure that the top vent is above the brisket at all times. You will get great bark! Enjoy! Thanks again!

    Great video. I am a weber believer. I got my first kettle about 5 years ago, now i have about 10 and all the wsm smokers. I've only used offsets for 15 years but now because of the flavor and ease of use im selling my prizes Brazos because i haven't used it in 3 years now. Weber is amazing...

      Thanks for watching! I agree, Weber is tough to beat! The only downside is the space available. I do some large cooks sometimes and it’s hard fitting 2 butts and I can definitely only fit 1 brisket at a time of course. I have a Brazos and also have the 80 gallon smoker in this video. I could really use a 250 gallon and will probably get one somewhat soon. But again just for the space it provides. The kettle does a fantastic job and I love it! Thanks again!

    I will die with my kettle. I work at a store that only sells Traeger smokers. Most everyone I work with has one. Don't get me wrong, they're nice and they're really great for set and forget type cooking. But, any time I bring leftovers for lunch. I always have to take extra for people to taste because the smell draws them in. They just can't figure out why mine always tastes better than theirs. They think its just technique and spices. I believe the shape and smaller space makes for a better cook.

      Thanks for watching. Rolling it away from the brisket helps in 2 ways. First, it gives you a handle to carry it with. Sounds silly, but it is actually helpful. 2nd, it’s just easier to roll it up in areas that might need extra protection (tip of the flat for example) if it’s rolled away. Otherwise you kind of have to dig it out from inside to roll it up. Hope I explained that well. Thanks again!

    Hey folks, in all fairness to my offset smoker, watch this video next....this smoker does a great job! Glad you liked the foil boat…I wasn’t sure what I wanted to do with the unknown but I hadn’t done a foil boat yet on my kettle (in a video, I mean) so that’s the route I took. The big difference for me is that the smoke and sizzle is much cheaper and it’s only one piece. But I do think they both work very well. Thanks again!

    An idea for the foil boat to try next time. Place the brisket on a cooling rack and wrap it with the rack. This prevents the brisket from sitting in liquid…

    Great video! A lot of offset smoker videos out there, but most people just have a simple grill in their backyard and these videos are much more applicable.
