Recipe: Dry ingredients for the spice mix: 1 tbsp cumin 1 tbsp peppercorns 2 tbsp coriander seeds 10 cloves 2-4 cardamom stick small 1 star anise 1 nutmeg 5 cardamom Roast the above ingredients and grind . Ingredients: 1 big onion thinly sliced 1 bay leaf 2 green chilli chopped 10 garlic pods chopped thinly 1 tbsp ginger garlic paste 1 dry lemon 1/2 kg rice 2 pcs chicken whole thigh Instructions : -Start with adding oil to the pan and add the garlic , chillies , onion and bay leaf -Sauté until they get light brown -Add 1 tbsp of the spice mix sauté and add 1 tbsp ginger garlic paste -Add 1 liter water for 1/2 kg rice -Add the dried lemon and the chicken leg at this stage to the water close the lid and leave for 10 mins - 3 mins high , 7 mins low flame . -After 10 mins take out the chicken leg which ll be half cooked . -Now add the roc and keep it at high flame for just until the water and rice comes to equal level and then give a stir , low the flame and leave for 10 mins exactly. Chicken Prep : Take the boiled chicken and add -the remaining spice mix -1 tbsp lemon juice -2 tbsp oil -1 tbsp tomato ketchup -pinch of turmeric -1tbsp ginger garlic paste Mix these nicely to the chicken leg and fry it on pan both side nicely , each side one minute for 10 minutes on pan will make the cook on chicken thighs perfect . After 10 mins the rice will be cooked perfectly and long now add some ghee sautés dry fruits such as almonds , cashews and raisins . And keep the chicken fry on the top of the rice close the lid until severed and enjoy .!!!
