After its as fermented as you like after 1-2 weeks depending on taste and how warm your house is I put it in the bottom back of my fridge for a number of months or until its gone

How long do you soak each time?
@@avp_ I like the USDA quick soak of boiling for 3 minutes then letting them sit for an hour before rinsing. You can also soak for 8 hours or overnight
@ thanks for responding! Do you find the quick soak keeps the beans from turning to mush when canning? I soak overnight but the beans always turn to mush in the electric pressure canner.
@avp_ I think quick soak is a better. Part of the difficulty with soaking overnight anything past several hours over hydrates the beans. I did some research on that because I saw a creator that was telling people to do much longer times. It’s not necessary. Eventually it over hydrates (mushy beans) and affects the flavor. Another reason I like the quick soak is the boiling removes much of any chemicals, why the salt which helps. I try to do good research because my daughter has a disorder that makes her highly sensitive to chemicals. Hope this helps 🌹

You didn't use a pressure cooker. Honey contains botulism spores, that's why you can't feed it to infants.
Yes always be cautious. This isn’t raw honey and the 10 minute canning time with a high acid food would make it okay. Any recipe you can use sugar instead. I made this so my adult daughter could eat it as she doesn’t use regular sugar. If I had children or babies eating this I would consider using some other form of sugar.
