Wild Alaskan Berry Tarte Tatin

In this video Chef Austin Green uses wild Alaskan berries to make a classic French pastry dish Tarte Tatin. He first makes a sugar butter sauce in the skillet using 1/2 cups of sugar to 4 table spoons of butter. Then he adds salmon berries, cloud berries and thimble berries and places the puff pastry on top and moves it into a 375 degree oven for about 15 minutes. He pulled it out when it was perfectly golden brown and carefully flipped it on to a plate. Austin served it with wiped cream and garnished it with fireweed flowers.

In an earlier time, when a lot of my generation were moving to S.E.Alaska, Young folks were starting out hand trolling in old wooden skiffs, powered with lawn mower engines, rigged to straight shafts and stuff boxes. For outriggers, they cut spruce poles and gerry-rigged them into place in the skiff. Mostly they were kelping, and some were just trolling with regular sportfishing gear, especially in situations where they were pretty close into the beach. This was in the 1970s. Eventually they were able to upgrade from these make-do skiffs, to better boats and gear in order to fish further out: At least, those who stayed. Many came, but few could make a go of it, and stayed. So a boat like the one showed in this video, would have been luxurious in comparison. And the onboard handling of the fish makes all the difference in what you get at the dock: Bleeding, gutting, cleaning, (where there is absolutely NO blood on the fish ) and icing properly, makes for a premium fish which buyers look for, from the boats. They know who cuts corners, and who doesn't spare time/effort in preparing the fish being sold. The same applies to knowledgeable sport fishing for the table, no matter the target species. Those who take the effort and time to properly bleed the fish, as soon as they come aboard, before gilling, gutting, cleaning and icing will get a premium product for their table. This from a man who has done both sport and commercial fishing for some 60 odd years. Wind at your back, flat water, tight lines....

I want to do this so bad can you tell me how difficult to sell are the salmon? is there a ready market and what do they pay for king salmon and for other species. I have someone who might finance me if I can convince them it is viable. is it difficult to learn to find fish? been fishing all my life. love to make money at it. thanx RS
Experts, please jump in and correct anything I maybe "off line" on. (Please excuse the bad pun)! I'm not in the industry but that fat salmon I'm holding was caught around Baranof Island. (I'm fortunate to have folks who live on the island. I caught that hog off my parents front porch basically, the King was pulling the little skiff my stepdad and I were in). Sean, please correct me if I'm wrong. Selling the salmon isn't an issue. Finding the salmon on the other hand, especially the bright shiners, that can be tricky. Unless you're contracted w/the government and/or have access to a hatchery, then I'd say you're plugged! Prices can fluctuate between species. Good money out there if you're willing to put in the work. Southeast Alaska is as dangerous as it is beautiful. Best of luck w/your ventures Sean. Selling the Salmon is the best part! All of the Processors have Fish Buying Tenders that are sent out through the season as needed to the fishing grounds to buy, re-ice, re-fuel and re-supply groceries to the fishermen. Some processors put barges in Bays to sell to. They're anchored most of the summer and have groceries, ice , etc. These are huge waters with vast remote areas, extremely finicky weather, and most folks who hand troll are close to a town or village where they can sell every day and seek shelter quickly. Condition and freshness of the fish caught can vary your price considerably. If fish are old or not handled right they will not be bought. It's not difficult to learn to find the fish if you are determined, listen to the sourdoughs, have patience and keep at it. Much success to you! Fish On !!
