Thank you Erin for this recipe. I made it over the weekend. I wish I could have held it up like you. I got a soggy bottom even though I followed each step, even making my own boiled cider because I did not want to pay $9.95 for shipping from King Arthur Baking. I made the pie over three days. I made pate frisée as my crust, let it sit overnight, made the apples and let them sit overnight. The apples had a great deal of liquid after an overnight stay in the frig. I was able to find cosmic crisp apples. I live in NY. Thanks again. Any suggestions for lessening up on the liquid while cooking the apples?

It truly is a delicious apple, I usually eat red apples and after I discovered the cosmic Apple it's been a step up in red apples it's so crisp like one of the best watermelons you've bought and it's so sweet and juicy delicious. I always put it in the fridge and peel it before I eat it.

These apples are delicious, I simply can't stop eating them! My new favourite for sure.

We live in Queensland Australia (North East). About two years ago, we took a trip down to Tasmania (a large island on the southern tip). Whilst there, we drove around Bruny island one day. A very small island with around 600 inhabitants. We stopped at an honesty box outside someones house which had freshly picked apples in a box. As I bit into one, the taste was amazing, I was instantly transported back to my childhood in Ireland where we would steal apples from the church orchard around September. It was right there that I realised I hadn't had a fresh apple my entire adult life, just long term storage apples. Sad huh!

Yes, but there's more types of apples that have not been bred that should be, like " Hidden Rose" this apple is actually pink inside, why not breed this and sell it nationally, or cross breed it?

Should add a blackberry pie to the lineup. Thatd be so good and a good seller. Can use that marion blackberry your all famous for in OR. Which is my favorite berry and fruit.
