PINA COLADA FRESCO
Four perfectly matched rums, followed by fresh pineapple linger and a hint of grassy coconut. Beautiful libation. Comes in at 25% ABV.

Make a FRESH PINEAPPLE MUG
Просмотров 40День назад
Select a fresh pineapple that is GREEN on the outside (or the cocktail may leak through the sides and bottom). A green one is also firmer and easier to handle when lifting the cocktail. Get a pineapple corer as shown in the video (the one that turns by hand). Measure 1½ inches up from the bottom of the pineapple to where the top is cut off. Mark the corer with a permanent marking pen for that d...
PASSION FRUIT MARGARITA
Просмотров 82День назад
Muted tequila taste, followed by a mild passion fruit taste. Very tasty cocktail. Comes in at 21% ABV. MIXING NOTES: Any blanco tequila should work if you prefer a muted tequila taste. Use reposado or anejo for more flavor. The fresh passion fruit juice is quite mild without the Chinola added. Lime juice can be increased to 1 ounce depending on your local limes and taste. X1 2 G4 Blanco tequila...
PASSION FRUIT PREP for the bar
Просмотров 45День назад
Using fresh passion fruit is the best way to get the real taste of passion fruit in your cocktail. There are many syrups, liqueurs and purees out there to buy. It is fairly easy to make the real thing, and costs around $1 per fruit. It takes two fruits to make 1 oz. of cocktail liquid. (your fruit size may produce more or less liquid). So buy about 4 fruits for two cocktails. Use a serrated kni...
PINEAPPLE PARADISE cocktail
Просмотров 38День назад
PINEAPPLE PARADISE Delicious peach tinted pineapple with muted rums linger. Hawai’ian room, NYC. Comes in at 15% ABV. MIXING NOTES: The peach brandy makes this one special. Hamilton 86 demerara rum will work. This is the original commercial profit recipe, but reducing the pineapple juice to 2 ounces would elevate this cocktail to credible 20% ABV, a better balanced libation… X1 1 Bacardi white ...
PRINCE HENRY'S PUNCH

A definite reorder cocktail! Beautifully balanced aged rum and agricole overtones, with a non-sweet, spiced raspberry finish. Pablo Moix Los Angeles. Comes in at 25% ABV. MIXING NOTES: R.L Seale 10YO rum works beautifully in this one. Use of Jamaican or Guyana aged rums in this one destroys the balanced flavor profile. Rhum J.M makes a great agricole blanc. Green Chartreuse is hard to substitut...
PINEAPPLE SURPRISE cocktail
Просмотров 97День назад
Tasty fresh pineapple with a medley of rum overtones. From Don the Beachcomber. Comes in at 22% ABV. MIXING NOTES: Increased the Appleton to 1½ from 1¼ to improve rum flavor and ABV. Increased lime to ¾ from ½ to cut sweetness (using my regional limes). Hamilton 151 can be used (I prefer its flavor). More than 3 chunks of fresh pineapple buries the rums. USE A GREEN SIDED FRESH PINEAPPLE for co...
THE TIKI LOVER cocktail

Delicious Zombie blend rum followed by a medley of island flavors. A very different and tasty high ABV cocktail! Hurricane Hayward. Comes in at 36% ABV before ice shaking. MIXING NOTES: The zombie rum is a blended OP rum and makes this cocktail special. The Chinola/Liber passion fruit ratios are ¼ and ¼ instead of ½ Chinola to add the proper sweetness balance. The bitters shown are necessary. X...
PAT O'BRIEN'S SQUALL cocktail
Просмотров 21714 дней назад
Flavorful passion fruit up front, muted rum taste, very refreshing classic cocktail. From an old Pat O’Brien’s menu 1970’s.Comes in at 24% ABV. MIXING NOTES: This is a passion fruit cocktail. The Bacardi Superior light rum (per the video) is too muted allowing the passion fruit and lemon to dominate. I recommend Bacardi gold (1-2 YO) as it adds a mild rum taste and still allows the passion frui...
BANA COLADA cocktail
Просмотров 16921 день назад
Delicious mild pineapple with a hint of grassy herbal coconut, scant rum taste. Very tropical, easy to like cocktail. A reorder! Comes in at 20% ABV. MIXING NOTES: Increased lime from ½ to ¾ to cut sweetness. This one has quite a few ingredients, but the multiple, well balanced tastes are worth it. X1 2 Plantation Stiggin’s pineapple rum (Barbados 80 proof) ½ Clement Premiere Canne (Martinique ...
WHITE WITCH cocktail
Просмотров 16521 день назад
Refreshing clear libation of lime-orange and a hint of mocha rum linger. Trader Vic, 1972. Comes in at 21% ABV. MIXING NOTES: Any white Jamaican rum will work. FYI, I used SelvaRey white rum from Panama on the 2nd round of testing, and it tastes great. Any crème de cacao will work. After video and 2nd testing, reduced the Bols creme de cacao to 3/8 as it tended to dominate. Increaded (my) lime ...
VIEUX CARRE cocktail

Cognac and rye combine beautifully, followed by a multi-spice linger. Classic New Orleans cocktail. Super sipper! Walter Bergeron, 1938. Comes in at 38% ABV. MIXING NOTES: Use rye of choice. Recommend Pierre Ferrand 1840 and Carpano Antica for best taste. X1 1 2" clear ice cube in glass 1 Rittenhouse (Kentucky 100 proof) 1 Pierre Ferrand 1840 cognac (France 90 proof) ¾ Carpano Antica (Italy 33 ...
OLD PAL cocktail

Original 1878 "Sparrow" Robertson bar notes version. Beautiful aroma, slightly spicy Campari followed by a lingering rye whiskey. Classic sipper! Comes in at 28% ABV. MIXING NOTES: Canadian Club was the original rye used (not sure of the proof back then). Orange peel twist provides just the right amount of orange essence to the Campari and vermouth.. X1 1 Old Overholt Straight Rye 4YO (Kentucky...
WARD EIGHT cocktail

This is a fabulous cocktail version as below. Perfectly balanced and deceptively mild despite the ABV. Rye and mild orange finish. 1898 Tom Hussion, Locke-Ober café Boston. Comes in at 35% ABV. MIXING NOTES: Original recipe calls for rye. Old Grand-Dad is a high rye bill bourbon, and with the extra Rittenhouse, it results in the magic mix. Use fresh OJ and lemon juices, and a decent grenadine s...
HALEKULANI COCKTAIL

HALEKULANI COCKTAIL Bourbon shines through, mixed juices linger. Excellent libation (no longer on the their drink menu) from the best bar in Oahu! Comes in at 23% ABV. MIXING NOTES: Use any bourbon, high proof works well. Use a flavorful grenadine, Liber for one example. Fresh juices taste best. X1 1½ Knob Creek 9YO bourbon (KY 100 proof) ½ lime juice (fresh) ½ orange juice (fresh) ½ fresh pres...
The grog concentrate would be too sweet with a whole ounce. It's difficult to approximate the vintage recipes without the old style grog mix. For a modern version of this cocktail using the grog concentrate, use the following recipe, which is exactly how they make it in the restaurants. 1 oz Light PR rum 1 oz Trader Vic's Dark rum 1 oz Puerto Rican 151 rum 0.25 oz Grog Concentrate (often bump this up to 0.5 oz, or else it is a bit too dry) 0.25 oz Trader Vic's grenadine (their brand is unique tasting and very deep red; try to use it if you can) 1 oz orange juice 1 oz lemon juice Flash blend in a blender
Might be the best tiki mug ever! Looks good sir
Not dishwasher safe, so it needs welcome refilling.
@@BellyUpBar no but when you are done with it, cut it up and toss it in your compost bin
Good thought!
Very cool. Nice job sir
This was a very enjoyable bartop experience. I filled it twice since it felt shameful to toss it away after just one! THX for your comment.
Nice job sir. Looks good
Try the Alternate recipe too. As usual, thanks for commenting.
Good job sir.
I'll be trying fresh passion fruit again sometime later in a rum cocktail. Thanks.
Looks good!
I got 1 ounce of juice from two passion fruits @ $1 each, or $2 per ounce. Pretty tasty through. Thanks for your comment.
Evening sir, looks good.
I've got fresh pineapples! THX for your comments...
Nice job sir. Looks good
Make this one if U have the ingredients. It is really tasty and hard to stop at one.
Remove all ingredients from can , place in bowl or container and mix using a hand mixer for about 30 seconds , you’re welcome🏆✅
Thanks for viewing this Channel and for your comment. In my colder climate, if the can is not heated, the contents have to be scraped out (some of it sticks to the inside can and is wasted) and it results in liquid with chunks of coconut cream when removed. That is why heating first is recommended unless you are in a very warm climate. Keep watching and commenting. Search RUclips "Belly Up Bar Cocktails" for over 400 cocktail videos. I Subscribed to your Channel hoping it helps U out...
Looks good. Nice job sir
I had a fresh pineapple!!!
Nice job sir
Thanks, this one is really quite good...
How long do you find it stays good/fresh for in the squeeze bottle?
It will last at least a month if refrigerated. Thanks for your comment. I Subscribed to your channel to help your effort. Keep watching...
Looks good as always. Nice job sir
This is so old, there is no recipe, only my memories.
Okole maluna!
It has been a while... I now have over 170 unique bottles of rum to make nearly every rum cocktail using the appropriate rum(s). FYI, I always go to your web page first to check out all tiki cocktails I am about to make. I hope U found more space for your rum bottles!. Thanks for your comment, and keep watching. I have made over 400 videos so far! FYI, I Subscribed to your channel if you need it.
@@BellyUpBar Thanks! I'll be revisiting all 50+ Mai-Kai cocktails again after they reopen in the fall. They have a new 100-proof Jamaica-Barbados rum in production that should elevate the classics.
I look forward to it. I made The Tiki Lover cocktail today using Hamilton Zombie rum...Absolutely delicious!
@@BellyUpBar I love that rum!
Found your channel by chance. Do you do mostly Tiki?
I make a lot of rum cocktails because I have over 150 different bottles of rum. Also, there are more recipes out there for rum. However, I make any cocktail that is classic and some that are improved riffs such as those from the NOMAD bar and Death & Co. Thanks for your comment. Be sure to check out the Playlists where you will see over 400 cocktails. I Subscribed to you in case your channel needs it.
@@BellyUpBar my channel's just a formality so I can actually function on RUclips. But yeah, I'll look through the playlists to see what I can learn.
Looks good sir

Nice job sir! Looks tasty
This one is really quite good as it is well balanced with a medley of tastes.
It is entirely my pleasure.
THX for UR comment. Hope U R enjoying the cocktails. More to come...
I like the knob Creek, it's a good sipper
I haven't tried their rye, but the 9YO does the trick at 100 proof.
Nice job sir
The drink looks cool and refreshing, but Mr. Fish looks cooler
The presentation, temperature and taste of the first sip is an indelible memory. I try to always us a decorative mug or correct chilled cocktail glass for aesthetic appeal. Appreciate your comment. Keep watching. I Subscribed to your Channel.
@BellyUpBar Thanks! I mainly use this one for comments but I'm also a bartender by profession. I love to see the classics and tiki cocktails you make. They're a great inspiration for when I make stuff!
It’s the funniest thing: I heard about a drink called a suffering bastard back when I was in high school. I always wondered about it. I’ve been a bartender for over twenty years and never had someone ask me for it. Thanks!
I remember ordering it once at Trader Vic's many years ago and have not thought of it again until making this video. Appreciate your comment. I Subscribed to your channel. Keep watching and commenting!
Looks like a great summertime drink!
Blue and pink colors always attract the eye of guests (see Chee Chee for example). Almost everyone wants to know what it is when they see it. Use clear (plastic for parties) glasses. Appreciate your comments, keep viewing!
Looks tasty. Nice job sir
Glad to see U R back! Thanks for your comments...
Perfect excuse to buy a bottle of Galiano, great vid. Cheers 🎉
They sell two sizes of Galliano Original, I always get the big one, but it is very tall and doesn't fit most shelves!. I appreciate your comments. Check the recipe in the Description for suggested lime juice amount.
How would I make this as a mocktail?
You can try omiting the first two ingredients and go with: 2 Persian lime juice (fresh) 1/2 Liber orgeat 1/2 maple syrup (100% Grade A) Shake cracked ice, all into an old fashioned glass. Thanks for watching.
I would watch and save more of your videos if you did not have weird ingredients or hard to find ingredients in them most of the time
I try to make the cocktails as close to the originals as possible so it sometimes takes a variety of ingredients. If you can see the Descriptions for all my videos, I have Mixing Notes so that if substitutions are OK you can use them. Thanks for watching and your comment. I Subscribed to help out your channel.
You should really sample the cocktail and let us know your thoughts on it. Just an idea.
If you can see the video's Description, I put mixing and tasting notes there... Thanks for your comment!

This one is super delicious, and getting a lot of views.
I've been experimenting with making my own rum. I've got 4 varieties and i like it. I call it Pirates Cove Rum
Wow! Distilling takes a lot of work. Good show!
@@BellyUpBar yes it does!
B.A.D. like Rhum! Nice job sir
The Haitian rhum is quite different than Martinique rhum. I like the Pele volcano Rhum J.M
@@BellyUpBar that's one of the cool things about rum. Every region makes it slightly different, with different sugars and process.
Nice job sir
These are tasty cocktails. Nice job sir
Layering in a small glass is very difficult.

I am liking the 10YO tawny port mix.
